Green Beans with Lemon

Can be prepared in 45 minutes or less.

Ingredients

1/2 pound haricots verts (thin French green beans) or regular green beans
1 teaspoon fresh lemon juice
1 teaspoon finely chopped fresh flat-leafed parsley leaves (wash and dry before chopping)
1/2 teaspoon freshly grated lemon zest
freshly ground black pepper to taste
  1. Step 1

    Trim regular green beans if using and in a large saucepan of boiling salted water cook beans until crisp-tender (2 minutes for haricots verts or 3 to 4 minutes for regular green beans) and drain in a colander.

    Step 2

    In a bowl toss beans with lemon juice, parsley, lemon zest, and pepper and season with salt.

  • Not worth the bother in my book. Used the expensive haricots verts and all the chopped and grated seasonings and still bland.

  • I liked this recipe, but modified it to my taste. Saute minced garlic in salt free butter and half a lemon's juice. Didn't use zest. Mixed cooked green beans into the lemon garlic butter.   • I was not impressed with this dish. I hadn't read the suggestions first, but even with olive oil I don't think it would have been interesting enough. Plain steamed green beans would have been better.

  • Very easy to prepare and the simplicity of the lemon allows the flavor of the fresh beans to stand out. I did also add a little bit of olive oil for some additional flavor and might try adding garlic as suggested by other reviewers.

  • These are good, I have made them a numerous amount of times as they are a very easy side dish. The only mod I make to this is adding in minced garlic. Other than that no changes. This is a great recipe for a thanksgiving dinner as well.

  • Of course this is a sneeze to cook. It's an acceptable recipe if you're working for low salt, high fiber, but it's pretty bland so I'll add more pepper to the next batch. The lemon zest is also not worth the extra work. I doubt you'd notice if you left it out.
