In Epi's3-Ingredient Recipesseries, we show you how to make great food with just three ingredients (plus staples like oil, salt, and pepper).

Here, we skip the mess of dredging and deep frying with these super-easy mozzarella sticks.

Ingredients

15 egg roll wrappers
1 pound smoked mozzarella, cut into 3x1/2" logs
Canola oil (for frying)
Kosher salt
  1. Step 1

    Arrange stack of egg roll wrappers on a clean work surface in front of you like a diamond. Working with one at a time, brush surface lightly with water. Place a mozzarella log across bottom third of diamond. Roll cheese up tightly in wrapper, tucking corners in halfway through. Seal edges, then repeat with remaining wrappers and cheese.

    Step 2

    Pour oil into a large nonstick skillet to come 1/8" up sides; heat over medium-high until shimmering. Working in batches, fry mozzarella sticks, turning once, until golden brown, about 2 minutes per side. Transfer to paper towels and season immediately with salt. Let cool slightly before serving.

  • These were simple and pretty good - easy execution. I tried plain fresh mozzarella, and it was too wet, but still worked okay. Instead of salting them at the end, I salted each wrapper after wetting them and before I added the cheese - easier to salt evenly. Great flavor!

  • Loved these! The egg roll wrappers have a nice crunch to them. Will try again with alternate cheese types. (to mackdesignint - note that the sticks are seasoned with kosher salt as soon as they are removed to paper towels)

  • I have made these with all kinds of cheeses. Buy the cheese sticks in any flavor they're all good. We especially like the pepper jack, but have used cheddar, mozzarella and colby jack. All good and so easy.

  • Why not smoked mozzarella? My guess is because it is delicious. These are so much easier than traditional mozzarella sticks and I love the crunch.
