Celery Salad with Dates, Almonds, and Parmesan

Sweet from dates, sour from lemon, bitter from celery, and salty from Parmesan, this humble salad manages to get all taste buds firing at once.

Ingredients

Makes 6 servings

1/2 cup raw almonds
8 celery stalks, thinly sliced on a diagonal, leaves separated
6 dates, pitted, coarsely chopped
3 tablespoons fresh lemon juice
Kosher salt, freshly ground pepper
2 ounces Parmesan, shaved
1/4 cup extra-virgin olive oil
Crushed red pepper flakes
  1. Step 1

    Preheat oven to 350°F. Spread out almonds on a small rimmed baking sheet; toast, stirring occasionally, until golden brown, 8-10 minutes. Let cool; coarsely chop.

    Step 2

    Toss almonds, celery, celery leaves, dates, and lemon juice in a medium bowl; season with salt and pepper. Add Parmesan and oil and toss gently; season with red pepper flakes.

  • Fantastic recipe. My go-to for taking to parties as it is easy and always gets rave reviews and people asking for the recipe. Have also substituted the parmesan with Feta which is also delicious. No one can believe that celery can taste this good!

  • I never thought a celery salad could be this delicious. We loved it. I came across the recipe by coincidence, shortly after watching the "Celery" episode on Portlandia. It featured Steve Buscemi as a celery salesman tasked with boosting the popularity of this humble vegetable. If only he had come across this recipe, it would have ensured his success!

  • Such a simple salad that would be good anytime of the year, as all ingredients are widely available. Nothing objectionable to anyone that we found. I did make with dried plums. still excellent.

  • So delicious! I made it roughly according to the recipe with the exception of grated parmesan, instead of shaved because that is what was I had in the fridge. At first the thought of combining celery and dates seemed odd but it really works well to create a delicious salad. Will be making again and again.

  • LOVED it! I served this at our annual Latke Night and it was a nice light note beside the fried food. I used one whole bunch of celery and eyeballed the rest of the ingredients. Fresh and crunchy with just the right amount of sweetness. Will make this again and again.

  • This simple salad was wonderful. Very easy and fast to put together. Would be great for a dinner party as the ingredients can be prepared ahead of time and assembled and dressed when ready to serve. Definitely do not skip the toasting of the almonds, as it is the most wonderful part. The salad truly does hit all of the senses!

  • 神奇的沙拉。不错的味道和质地。我不是一个fan of celery although I always have some in the refrigerator. Since there were only two of us I used 4 celery stalks and about 1/4 C almonds, but did not change the other ingredients. Have finally found a good use for celery! Will definitely make again.

  • This salad is surprisingly simple and delicious, and I'm not even a big celery fan. The toasted almonds really made the dish. My husband thought the lemon was a little sharp (I disagree), but I was cutting the recipe and the proportions weren't exact. We'll serve this at an upcoming dinner party.
