Ingredients

4 Servings

4 whole wheat tortilla wraps
1 cup fresh baby spinach leaves
1 red bell pepper, sliced into thin sticks
1 medium carrot, sliced into thin sticks
  1. Step 1

    1. In a small bowl toss chicken with pesto just to coat.

    Step 2

    2. Place 1 tortilla on a flat surface in front of you. Place 1/4 of the spinach onto the center of a tortilla and top with 1/4 of the peppers and carrots.

    Step 3

    3. Place 1/4 of the chicken on top of the vegetables.

    Step 4

    4. Wrap up into a burrito and repeat with remaining tortillas and ingredients.

  • My husband and I love this. It has become a staple weekly dinner that even HE can make. Instead of eating it cold however he likes to warm the chicken with the pesto, carrots and pepper on the skillet. Also we cut out pepper and carrot up a bit more instead of having long slices.
