Chipotle Aioli

Ingredients

1 cup mayonnaise
2 tablespoons finely chopped chives
2 minced garlic cloves
2 teaspoons fresh lime juice
1 teaspoon chipotle chile powder or chipotle hot sauce
Salt and pepper
  1. Whisk mayonnaise with chives, garlic, lime juice, and chipotle chile powder or chipotle hot sauce to taste. Season with salt and pepper; chill until ready to serve.

  • I have made this many, many times over the years with the most recent a few days ago, everyone comments on how great it is...would definitely recommend especially with chicken and shrimp but also works as a french fry dip or burger spread.

  • This is the best aioli I've ever made for my fish tacos. I didn't have the chipotle powder so I used my canned adobo in sauce. I also had to leave out the chives.

  • Loved this recipe. I ended up cutting the chipotle chili pepper in half because my wife wouldn't have liked it quite that spicy. Served on fish. Perfect for a tortilla-encrusted baked fish.

  • Quite tasty! I doctored the recipe a little according to others suggestions: double the lime juice and two large chippotles in adobo (minced) in addition to the 1 tsp. ground chipotles. Served it with oven fries. Side note: this is a lot of aioli, even though you will want to put it on everything. Recommend cutting down to half or third batch.

  • 我用1/2梅奥和1/2酸奶。也用2 chipoltle chiles in canned adobe sauce in place of the chili powder. I used green onion in place of chives. Didn't need salt or pepper. Wonderful

  • Ridiculously easy to make. I would add a little more chile powder next time. I also used half mayo and half greek yogurt to cut down on calories and fat.
