Cool Cucumber Raita

If you don't have time to drain regular yogurt, buy thick, Greek-style yogurt, available at many supermarkets and at specialty foods stores.

Ingredients

6 servings

2 cups plain whole-milk yogurt
1 7-inch-long piece English hothouse cucumber, peeled, coarsely grated
1 teaspoon coarse kosher salt
2 tablespoons (packed) finely chopped fresh cilantro
4 teaspoons finely chopped fresh mint
  1. Step 1

    Line strainer with cheesecloth and place over bowl. Add yogurt; cover and refrigerate at least 2 hours and up to 1 day.

    Step 2

    Combine drained yogurt and grated cucumber in small bowl. Add coarse salt, chopped cilantro, and chopped mint; mix well. Cover cucumber raita and chill at least 30 minutes and up to 2 hours.

  • This was a nice, easy recipe that came out pretty much just like my local restaurants'. (Added some cumin powder and lemon juice, and some thinly sliced radishes, too.)

  • This is a nice easy raita. I made with organic 1% yogurt from Trader Joe's. I added more cucumber than the recipe called for (I had a large english cucumber and just added the whole thing) and I wish I hadn't, but it was still nice with good flavor. It benefited from a few drops of lemon juice. Somehow not quite a wonderful as the cucumber raita at my local restaurant, though. Maybe I should have used full fat yogurt.

  • Yummy - and wonderful with the chicken masala and cumin carrots. Having made Raita before I changed it up just a little - Added more Cucumber, a dash of Cumin Powder and a squirt of lemon. Yumm Yumm!
