Easy Cornbread

This bread is also perfect with chili.

Ingredients

3 tbsp unsalted butter, melted, cooled, plus more
1 1/3 cups all-purpose flour
1 1/3 cups cornmeal
2 tbsp sugar
1 tbsp baking powder
1 tsp kosher salt
3/4 tsp baking soda
3 large eggs, beaten to blend
1 cup buttermilk
1/2 cup whole milk
  1. Step 1

    Preheat oven to 350°. Butter an 8" x 8" baking dish. Whisk flour, cornmeal, sugar, baking powder, salt, and baking soda in a large bowl. Whisk eggs, buttermilk, and milk in a medium bowl. Whisk wet mixture into dry until just combined (batter will be lumpy). Mix in 3 tbsp butter.

    Step 2

    Scrape batter into baking dish and bake cornbread until a tester inserted into the center comes out clean, 25-30 minutes.

  • This is nice recipe, like people have said not too sweet, I will make it again and knock back the baking soda a tad. Enjoying a warm piece with a lot of honey drizzled on it. A good combo.

  • I thought this was easy and great! Definitely not too sweet but I don't like that anyway. I added frozen corn kernels for texture and baking time took a bit longer.

  • This was not the cornbread I was looking for. I really wanted that sweet, crumbly corn bread that you get in the south. This came out very bland, and almost bitter. I guess I'll continue on my quest for the perfect cornbread recipe!

  • perfectly named recipe- takes just under an hour, very easy! This recipe is perfect for making turkey stuffing - unlike many of the recipes you will find, it's not too sweet. That said, it's great for eating as well!
