We love the way the gin in this old-school sparkling cocktail pairs with the juniper berry-laced arctic char in ournew-school citrus gravlax.

Ingredients

Makes 8 servings

1 cup gin
1/2 cup fresh lemon juice
Champagne (Prosecco or other sparkling wine works in a pinch)
lemon twists
  1. Stir 1 cup gin, 1/2 cupNo-Cook Simple Syrup, and 1/2 cup fresh lemon juice with ice in a medium pitcher for 10 seconds. Strain into Champagne flutes or coupe glasses. Top with chilled Champagne (Prosecco or other sparkling wine works in a pinch). Garnish with lemon twists.

  • I long ago replaced the simple syrup with triple sec. Ambrosial! This is the standard cocktail placed in every guests' hand upon arrival during the holidays. Beautiful with pink champagne. It's the most requested cocktail I've ever served.

  • I think the recipe is slightly different on my epicurious app. Anyway, I chilled the simple syrup, lemon juice and gin in the freezer for a bit before adding a bottle of dry champagne into the pitcher. It was DELICIOUS. Light and crisp enough for a summer drink, but bubbly and festive for the holidays too.
