Frozen Yogurt Bark

Just the right mix of crisp, creamy, and barely sweet, this frozen treat is exactly what we want to snack on all summer long. Make it with pistachios and raspberries, or swap in your favorite nut and berry.

Ingredients

Serves 6–8

2 cups full-fat unsweetened Greek yogurt
3 tablespoons honey
1 teaspoon vanilla extract
Pinch of kosher salt
1/2 cup fresh raspberries, halved, or other fruit or berry
1/3 cup chopped unsalted pistachios or other nut
  1. Step 1

    Line a rimmed baking sheet with parchment or wax paper. Using a rubber spatula, mix yogurt, honey, vanilla, and salt in a medium bowl until smooth. Pour into the center of prepared sheet and spread to 1/4" thick. Top with raspberries and pistachios. Freeze until completely firm, about 4 hours. Break into pieces to serve.

    Yogurt bark can be made 2 months ahead. Freeze in a resealable container.

  • This is a fun recipe to create your own rendition with. It even looks nice! It melts in your mouth. I've tried changing up the nuts, adding different fruits and each time I get rave reviews. It sure beats the sugary packed snacks most people eat.

  • I found full fat Greek yogurt that already had honey and vanilla in it so I used that for the base and I used the raspberries/pistachios combo. It does melt quickly if you try to hold it in your hand like conventional candy bark, but I had good results eating it with a fork.

  • I plan to make this soon! Based on the comments about texture/ melting too quickly, I would wonder about using part melted white chocolate and not use any honey as a combined sweeetner/means of adding structure?

  • 这个生日聚会,成年人喜欢它, most of the children as well! It's healthy, so easy to make, so many variations possible. It does start melting as soon as you take it out of the freezer but I didn't have to worry as it disappeared quite quickly.

  • I had dreams of this tasting like white chocolate bark. After I got over that, I liked the taste but not the texture of the frozen yogurt. I substituted mango for the raspberries and that was a great combination - if I could have enjoyed the texture more.

  • Chocolate drizzle sounds like a stellar topper but any suggestions on how to maintain the frozen state a little longer? I broke the bark into bite size pieces and doled them out straight from the freezer which worked fine but a little time consuming for the hostess...

  • The taste is nice. I did it with fresh apricots and mixed nuts. But it is a bit difficult to eat as it melts immediately. But it is original and changes from ordinary ice cream. Other advantage, it is low fat and you can even reduce the sugar.

  • Oops, recipe did say to halve the raspberries. Sorry I complained about the size.

  • Too tart for me and thought raspberries needed to be halved. Those issues could be fixed in lots of different ways.

  • It was good, not great. Hard to eat as it melts quickly but not fast enough to eat with a spoon? I could only find 0 fat Greek Yogurt so it did form slight crystals in the finished product. Easy to make and loved the pistachios and raspberries. Chocolate drizzle might be a great addition?
