Ginger-Grilled Chicken and Radishes with Miso-Scallion Dressing

Yes, you should be marinating your chicken with soda! Here, a can of ginger beer is the secret ingredient for sweet-tart grilled chicken.

Ingredients

6–8 servings

3 lb. skinless, boneless chicken thighs
3 1/2 tsp. kosher salt, divided, plus more
1 (12-oz.) can ginger beer
6 garlic cloves, finely grated
3/4 cup plus 6 Tbsp. unseasoned rice vinegar, divided
3 Tbsp. plus 1 tsp. finely grated ginger (from about one 4" piece)
1汤匙。白味噌
3/4 cup plus 1 Tbsp. vegetable or sunflower oil, plus more for grill
6 scallions, finely chopped
2 bunches radishes, preferably with greens, halved lengthwise
Freshly ground black pepper
3 heads Little Gem lettuce or romaine hearts, leaves separated
  1. Step 1

    Season chicken on all sides with 2 1/2 tsp. salt and place in a large bowl. Add ginger beer, garlic, 3/4 cup vinegar, and 3 Tbsp. ginger to bowl and toss to combine. Cover and chill at least 2 hours and up to 24 hours.

    Step 2

    Meanwhile, whisk miso, 3/4 cup oil, 1 tsp. salt, and remaining 6 Tbsp. vinegar and 1 tsp. ginger in a small bowl. Mix in scallions. Let dressing sit at room temperature up to 1 hour, or chill up to 24 hours.

    Step 3

    Prepare a grill for high heat; brush grate lightly with oil. Grill chicken, turning occasionally, until lightly charred and an instant-read thermometer inserted into thickest part of thigh registers 165°F, 12–15 minutes. Transfer to a platter and tent with foil to keep warm.

    Step 4

    Toss radishes with remaining 1 Tbsp. oil in a medium bowl; season lightly with salt and pepper. Grill, turning occasionally, until charred in spots, 8–10 minutes. Transfer to platter with chicken.

    Step 5

    Toss lettuce with about one-third of dressing in a large bowl. Drizzle another third of the dressing over grilled radishes. Serve remaining dressing alongside.

  • I made it exactly as the recipe instructed. I marinated the chicken for 24 hours. This was a FANTASTIC dish! The chicken was moist and flavorful and not too sweet. Radishes were a nice surprise. I have never grilled radishes. My daughter says they looked like potatoes, but they were definitely char grilled radishes. This recipe was quick and easy on a hot summer night and will definitely go into my regular rotation. Delicious!

  • Very yummy! I used breasts because that’s what we like and cooked under the broiler. I felt the dressing was too sharp as is, so I added some sugar. For a bit more zip, I also added Japanese Seven Spice and some sesame oil.

  • 糖的苏打使鸡肉更challenging to cook as it made the meat more prone to burning, so I understand why the recipe calls for skinless chicken. I also got really flavorful results from just marinating for 30m at room temp. If I hadn't made like 3 vinaigrettes this week I would have messed this one up as it just says whisk it all together which would likely result in a dressing that would break. If you don't want to describe how to do it you should link to a technique for it. Outside of that... I was surprised at how delicious the radishes are. Who knew? I normally struggle with the bite from a radish but I loved these. The dressing is rich and flavorful, full of umami. I added some minced black garlic, which I'd recommend if you have it. Would definitely do this again. Love these flavors.

  • Radishes were definitely the best part. Miso dressing was not that flavorful and required lots of enhancements with fish sauce, etc. Marinaded chicken for five hours—maybe needs 24?. Better recipes on Epicurious.

  • Didnt get to enjoy this till almost 1am due to getting home late but wow was it worth the wait!!! Made a few changes since I dont Have access to a grill atm - I pressure cooked the chicken in the marinade (replacing the water) and than cooked the radishes for 6 minutes on high heat in a cast iron over the stove. First time cooking radishes so that was fun and a pleasantly tasty surprise! I usually have them in salads or soaked in salt water. Or just plain salted haha) Would definitely make this again!!

  • Ended up having to transfer this to the oven as my propane ran out right as these hit the grill (Memorial Day cookout fail) and these were fantastic regardless. Made them with roasted peppers and onions which I tossed at the end with the vinaigrette as my husband is picky about radishes. Marinade leant great flavor and kept the chicken moist. I did I slight baste with the miso dressing in the last 5 minutes of cooking and spooned the rest over the hot chicken. Fantastic flavors.
