Ingredients

Makes about 1/2 cup

3 tablespoons cumin seeds
2 tablespoons dried oregano
1 to 1 1/2 tablespoons chipotle chile powder
1 tablespoon kosher salt
1 1/2 teaspoons anise seeds
5 cloves
Equipment: an electric coffee/spice grinder
  1. Finely grind all ingredients in grinder.

Cooks' notes:

Spice rub keeps in a sealed container in a cool, dark place 6 months.

  • Okay, so I did not read the recipe correctly. I saw cloves and assumed garlic. It was good with the garlic instead of cloves though.

  • The flavor was very good but the garlic turned the mixture into a paste that was difficult to spread on the pork tenderloin. I'll try garlic powder the next time.
