Smothered Yellow Squash with Basil

Smothering is a Cajun cooking term that refers to browning anything from meat to vegetables in oil, then braising it in a small amount of liquid, tightly covered, until tender.

Ingredients

4 servings

2 tablespoons olive oil
1 1/2 lb medium yellow squash, halved lengthwise and cut crosswise into 1/8-inch-thick slices
2 garlic cloves, finely chopped
1/2 cup water
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup finely chopped fresh basil
  1. Heat 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then add half of squash and sauté, stirring occasionally, until browned, about 5 minutes. Transfer browned squash to a bowl, then heat remaining tablespoon oil and sauté remaining squash in same manner. Return squash in bowl to skillet. Add garlic and sauté, stirring occasionally, 1 minute. Add water, salt, and pepper and simmer briskly, covered, until squash is tender and most of liquid is evaporated, 6 to 7 minutes. Stir in basil.

  • Added onion and red pepper as other reviewers suggested and cut back a bit on the water. The basil really is a nice flavor with the squash. Solid side dish.

  • Delicious! I used chicken stock instead of water, and sprinkled on some onion flakes. Didn't really measure anything, but it worked! Might try making a cold soup based on this recipe, since the garden is overflowing with basil and yellow crookneck squash.

  • very good. I never would have thought of putting basil and yellow squash together but it worked really well. Only thing is, the combination of water and keeping the lid on resulted in too much liquid, which I drained out.

  • This recipe was a godsend--I needed to use the season's last basil and some yellow squash I bought in the grocery store. It came out delicious. I used a stick free skillet, so the browning took longer and was probably not as crispy as a normal skillet would do it. I also gently sauteed sliced onion before adding the browned squash back. It could have used more basil because of the onion, maybe? Anyway, I know this was loaded with healthy phytochemicals in addition to the good taste.

  • We were totally overwhelmed by the yellow squash our 2 plants produced so I tried this recipe. Although it was easy to assemble and tasted okay, will probably not make it again as there are so many other really good recipes incorporating yellow squash on this site. It was just okay.

  • I grew up with this recipe, but we sauteed the squash (and thinly sliced onions) in bacon grease -- not a lot -- and added LOTS of black pepper. This is a nice healthful update to our traditional recipe.

  • We really enjoyed this dish. I had a whole lot of yellow squash to cook up. So this worked out perfect. I ended up adding purple basil from the garden which added a hint of sweetness.
