Sophisto Joes

These are the Jay Gatsbys of sloppy joes—suave, debonair. But we'd be remiss if we let the black-tie frippery of these cosmopolitan joes belie their true nature: Just as with Fitzgerald's famous hero, there's substance underneath all that class. These civilized sandwiches are hearty, delicious, and perfect for a weeknight dinner.

Ingredients

4 servings

1 (14 1/2-ounce) can whole tomatoes in juice, drained
1 large onion, chopped
4 garlic cloves, finely chopped
2 tablespoons unsalted butter
1 medium carrot, finely chopped
1 celery rib, finely chopped
1 1/2 lb ground beef chuck
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 cup dry red wine
2 tablespoons Worcestershire sauce
1 1/2 tablespoons packed brown sugar
4 kaiser rolls, split
  1. Step 1

    Purée tomatoes in a blender.

    Step 2

    Cook onion and garlic in butter in a 12-inch heavy skillet over medium-high heat, stirring occasionally, until onion begins to brown, 4 to 5 minutes. Add carrot, celery, and 1/2 teaspoon salt and cook, stirring occasionally, until vegetables are softened, 4 to 5 minutes.

    Step 3

    Add beef and brown, stirring to break up lumps, 5 to 6 minutes. Add chili powder, cumin, 1/2 teaspoon salt, and 3/4 teaspoon pepper and cook, stirring, 2 minutes. Add puréed tomatoes, wine, Worcestershire sauce, and brown sugar and boil, stirring occasionally, until sauce has thickened, about 6 minutes. Season with salt and sandwich inside rolls.

  • Pretty good recipe overall but it came out noticeably sweet when I made it. I would cut the brown sugar in half, at least. I ended up adding more worcestershire and some soy sauce to try to help balance it out. Came out fine, but I'll cut the sugar down if I make it again.

  • Not spicy but very flavorful! I had everything in the pantry or fridge except the kaiser rolls!

  • 这是一个easy and delicious recipe. I triple the spices and add 1/4 c more of the wine and 1.5 more tablespoons of the sugar. Also, add more salt and pepper to taste. I often add more veggies (any colors of bell peppers, mushrooms) and usually cook 2 lbs of ground beef. I have made this without wine, and it is still good but doesn't have the added kick that a pinot noir contributes.

  • I do not like spicy foods and this wasn't spicy at all so my bland palate says those that found it too spicy may have used ground chilies instead of chili powder. I didn't find it sweet, neither, just kind of bland. I threw a bit of bbq sauce on my kaiser and the rest of the family followed suit.

  • I always hated sloppy joes growing up, because they just tasted like tomatoes and hamburger to me (and as a result I rarely fixed these for my kids), but this is a recipe is a good one. I had fresh ground pork already on hand, so I just filled in what I still needed with ground chuck and together they were fine. For my own taste, I added a bit more cumin because I like that it offers heat that isn't on the tongue, so you can still taste other things. I do agree that the brown sugar makes it sweeter than I like -- particularly with carrots which are sweet already. Maybe parsnips next time with no added sugar would solve this problem: still a veggie, sweeter than carrots alone, but not as sweet as the two together. Will make again -- I like sloppy joes now!

  • Very good recipe but I would definitely start by using 1 tsp of chili powder instead of 1 tbsp. I didn’t even put 1 tbsp and it was too much for the kids and borderline too spicy for me and I do eat a lot of spicy foods

  • This was just ok. subbed 1/4 cup of vinegar for 1/4 cup of the wine - used masala. added extra chili pepper and some red pepper flakes as well. so so.

  • Loved this. Very different dinner for me and my husband, but a big hit, and I will be making it again. It was simple and flavorful. I used more veggies than the recipe called for and cut down on the sugar a tad. It definitely has a bit of a kick, so if you don't like spicy, cut down on the chile powder and cumin, but we loved it the way it is.

  • This is very similar to a recipe I made up many years ago. Mine used catsup instead of the tomatoes. I like the use of the tomatoes better than my version as it won't have as much sugar in it. Most catsups these days have HFC in them unless you really look for one that doesn't. I have a couple brands I have found with HFC. I added about 3 times the carrots and 1/2 celery heart instead of the amounts you did because in our family, it is not about the meat, it is about the vegetables & fiber. Otherwise I left it alone and it was very good. I make my own whole wheat sandwich buns and they were a good match for the joe filling recipe. tysm

  • I was pleasantly surprised by this recipe! Delicious! My boyfriend loved it and he seldom has too much to say about food. I used 93% lean ground beef, 10 oz. low sodium tomato sauce, only half a carrot and a mix of marsala wine (it's what I had!) and red wine vinegar. Tasty!

  • There are three of us doing this review. one would have given it a four fork rating and the other two give it three. Here's what we think...it was a bit too sweet but really quite delicious. Nice and filling on this first day of snow in Vermont. We used our own grass fed beef burger (Clarence), fresh tomatoes from our garden...a mix of cherry varieties, plums and then a bit of canned tomatoes and salsa (cause we were doing some improv). Very happy and delicious alongside some slaw with cabbage, kohlrabi, red and green peppers...all fresh from the garden.

  • Delicious, indeed. Everything here to send you in the right direction. Make it your own and enjoy it. I added vinegar per previous reviews and loved that flavor in the dish.   • It was great! I used venison. Also, I substituted 1/4 cup of wine with red wine vinegar, as previously suggested. I will definitely make this again.
