Spicy Calamari with Bacon and Scallions

Sautéing the squid in the bacon fat adds tons of flavor to the seafood itself. Fried calamari with marinara sauce will be but a distant memory once you try this.

Ingredients

Makes 4 (main course) servings

1 1/2 pound scleaned medium squid
1/4 pound bacon (about 5 slices), cut crosswise into 1-inch pieces
1 cup chopped scallions
1/2 teaspoon dried hot red-pepper flakes
  1. Step 1

    Rinse squid under cold water, then pat dry between paper towels. Halve large tentacles lengthwise and cut bodies (including flaps, if attached) crosswise into 1/2-inch-wide rings.

    Step 2

    Cook bacon in a 12-inch heavy skillet over medium heat, stirring occasionally, until golden and crisp, then transfer with a slotted spoon to paper towels to drain.

    Step 3

    Toss squid with 1/4 teaspoon salt.

    Step 4

    Heat fat remaining in skillet over high heat until very hot, then sauté squid with scallions and red-pepper flakes until just cooked through, about 3 minutes.

    Step 5

    Serve squid immediately, sprinkled with bacon.

  • flavorful and easy. I added sauteed garlic and a ghost pepper instead of red pepper flakes. served with garlic bread and a ceasar salad. easy and delicious.

  • I have made this a couple of times and love it. The cooking instructions for the quinoa here does make a fluffier quinoa. I have also cooked it the traditional way which is not as fluffy. Will surely make again and again.

  • reminds me of a spanish tapas dish. It is good as long as you dry the calamari well.

  • oh my, this was terrible. All the fat and none of the taste! maybe I didn't dry the calamari enough. Oh well.

  • Would definitely make again. I used pre-cut frozen calamari rings which make this recipe a quick dinner especially when paired with The Edamame and Carrot Salad with Rice Vinegar Dressing recipe!

  • YUM!! i've made this twice in 2 days it was that good - the second time i served it over spinach, halved cherry tomatoes and a bit of garlic that i sauteed over high heat just to wilt - the perfect, quick, easy, have all the ingredients, don't have to think about it meal!

  • Easy but not very tasty. Make sure you thoroughly dry the calamari before cooking or you will end up with no taste at all!

  • Delicious...but try it with pancetta, the air-cured Italian bacon. Smoked American bacon is too strong to pair with squid.
