Sweet and Tangy Peach Relish

Ingredients

Makes about 2 1/2 cups

4 medium peaches, about 1 1/2 pounds, peeled and cut into 1/2-inch-wide slices
3/4 cup sugar
1/2 cup cider vinegar
1/4 teaspoon hot red-pepper flakes
1 small red onion, halved lengthwise and sliced crosswise 1/8 inch thick (1 cup)
3/4 teaspoon salt
  1. Combine peaches, sugar, vinegar, and hot pepper flakes, and briskly simmer, uncovered, until liquid thickens slightly, 15 to 20 minutes. Stir in onion and salt and simmer for 5 minutes. Relish will continue to thicken as it cools.

Cooks' note:

•Relish can be made 5 days ahead and chilled, covered. Bring to room temperature before serving.

  • I skipped the red pepper flakes and substituted half a seeded/diced jalapeno when the onions are added. Keep an eye on the pot as the liquid thickens. I let mine go a bit too long and it got jammy. But still delish over a grilled pork chop. Leftovers used on turkey burgers and folded the last bit into corn bread batter. I wonder if adding a little fresh-chopped peach /onion/jalapeno to the simmered relish would make it a bit fresher and perk up the texture? But, this was very tasty and really jazzed up the pork chop and turkey burger. Perfect for summer.

  • Great -- based on a suggestion from Cooks Illustrated I used pickled jalapeno peppers and it was fabulous!

  • If I try this again I think the vinegar needs to be cut back to 1/4 cup. The vinegar bite was overwhelming.

  • Delicious on the Grilled Rib Pork Chops. Reduced the sugar to 1/4 cup and 1/4 tsp salt. Perfect balance with vinegar.

  • I thought it was delicious. Gosh, do you Americans like your savoury food sweet!! I put in a l/4 cup less sugar - tasted it towards the end and it was still too sweet, so was obliged to add some vinegar. I would like a little bit more onion in it. Apart from the sugar, I kept strictly to the recipe. It's market day to-morrow, so will buy some more peaches to make more. It would probably keep for quite a while. I ate it with pork, but I'm sure it would be scrumptious with any game, duck, pigeons and quails. Have the latter and will try this weekend.

  • The pickled flavor definitely pairs well with grilled pork. I added a tsp. of coriander seeds and tsp. of peppercorns, plus a splash of framboise because I had it on hand.
