Sweet-Cream Coffee Butter

Don't just wake up to coffeeandtoast, wake up to coffeeontoast with this caffeinated breakfast spread that's reminiscent of your favorite milky latte.

Ingredients

Makes about 1 cup

1/4 cup heavy cream
3 tablespoons sugar
2 tablespoons safflower or other neutral oil
2 teaspoons finely ground espresso powder
1/8 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, softened
  1. Step 1

    Cook cream, sugar, oil, espresso powder, and salt in a small saucepan over medium heat, stirring, until just simmering and solids are dissolved, about 2 minutes. Transfer to a small bowl and chill until cool, about 30 minutes.

    Step 2

    Beat butter on medium-low speed in the bowl of a stand mixer fitted with the paddle attachment (or in a food processor) to combine. With the motor running, drizzle in cream mixture. Increase speed to medium-high and beat until combined and smooth. Transfer to a resealable container and chill at least 3 hours. Let sit at room temperature at least 15 minutes before serving.

  • Delicious and dead simple to make. I heated the cream etc in a pyrex measuring cup in the microwave for 1 minute which made drizzling into the butter very easy. Paddle attachment worked fine though I did stop twice to scrape the bowl and paddle. I made this butter to go with Chrissy Teigan's Banana Bread (and it was great) but honestly I think the flavors would shine more with a simple piece of brioche or something like that.

  • This is phenomenal! I followed the recipe exactly. I did use the paddle attachment to mix and it worked fine for me, though it did take several minutes for everything to smooth out. I want to put this on EVERYTHING!

  • Also, the coffee mix can easily be heated in the measuring cup used for the cream, in the microwave, for 1-2min.

  • OMG. This is SO good! I used liquid cream and instant coffee granules, since that's what I had handy. And they seemed to work fine. I would use the whip attachment; I used the paddle, and the butter didn't blend in with the coffee mixture as well as I would've liked. I'm trying to find new excuses for snacking on butter now.

  • Very easy and delicious. I used a couple of Starbucks Via pouches for the espresso powder and it had a lovely coffee flavour. Served at mother's day brunch with a carrot loaf and it was a smash hit. Will definitely make again.
