Tropical Sparkling Sangria

Ingredients

Makes about 2 1/2 quarts.

2 limes, sliced thin
2 small carambolas (star fruit, available at specialty produce markets), sliced thin crosswise
1 chilled 750-ml. bottle dry white wine
1 chilled 12-ounce can mango nectar
1 mango, cut into 1/2-inch cubes
1 chilled 12-ounce can ginger ale
1 chilled 750-ml. bottle champagne
  1. Reserve some of the lime and carambola slices for garnish. In a large pitcher stir together the white wine, the mango nectar, the mango, and the remaining lime and carambola slices. The sangría may be prepared up to this point 1 day in advance and kept covered and chilled. Just before serving, stir in the ginger ale, the champagne, and ice cubes and serve the sangría garnished with the reserved lime and carambola slices.

  • White wine sangria is a great summer refresher but the champagne makes this recipe perfect for any occasion. The last time I served this it made avowed beer drinkers swoon, put down their bottle and pick up a glass of this. Any fruit works alongside the mango (apples, peaches, grapes, etc.)

  • This is not a drink for serious drinkers, but it is wonderful to sip with friends on a hot summer night on the patio or around the pool. Everyone enjoys it because it is light and refreshing with just enough bubbles to make it fun!
