Lime Butter Sauce

It takes only 5 minutes to make this fantastic sauce. Once you see how versatile it is — it works perfectly with thegrilled salmonand thegrilled corn— you'll want to make it for a whole host of your summer favorites.

Ingredients

Makes about 3/4 cup

1 large garlic clove, chopped
1/4 cup fresh lime juice
1 teaspoon salt
1/2 teaspoon black pepper
1 stick (1/2 cup) unsalted butter, melted
  1. Purée garlic with lime juice, salt, and pepper in a blender until smooth. With motor running, add melted butter and blend until emulsified, about 30 seconds.

Cooks' Note:

Lime butter sauce can be made 1 day ahead and chilled, covered. Stir before using.

  • Absolutely delicious! Perfect amount of garlic and fresh lime juice gives it a wonderful flavor. I roasted shrimp and put over jasmine rice with lime butter sauce. Added fresh cilantro to rice as well. This is a keeper.

  • I'm so confused by this sauce. I mean I should've known it was gonna be twangy to the max, but almost everyone loves it. I could see it as a marinade, but i couldn't even taste the butter. Would've been equivalent to pouring vinegar on my fish. I signed up just so i could comment so some1 could fill me in. I hate not giving a good review

  • Used on eggs Benedict instead if hollandaise.My favourite eggs Benedict is with salmon but I'm sure it would work equally well with crispy bacon Brilliant recipe!!!!

  • I am not going to give this a fork rating because I didn't make it exactly as written. I took a tip from another reviewer to make it a bit more healthy. I used half butter and half coconut oil and melted them together then followed the recipe. WOW delicious! I served 4 and only used about 1 TB per serving on Salmon. I have a bunch left but can't wait to try it on other things. REALLY FAB

  • Amazing recipe! I made a batch and have used it every day for something. Is fantastic with corn on and off the cob. I also brushed the outside of New England style hot dog rolls and toasted them to make lobster rolls even more delicious! Also used in mashed potatoes, and I plan on using it with other vegetables and fish.

  • Usually don't take the time to write reviews, but this is fantastic! Literally all wanted to lick the plate clean it was so delicious. I grilled salmon and shrimp and then added the lime butter to rave reviews from all our dinner party guests. Best part is it takes five minutes to prepare! Going to try it out on pasta next.

  • to make it more heart healthy, I cut the butter to 2 tbsp and add lime zest and stir in a bit of plain yogurt at the end.
