When apple season hits but peaches still linger at the market, it's time for a standout condiment to round out a main course or dessert.
Ingredients

Step 1
Toss apples, peaches, sugar, cardamom, cinnamon, ginger, and salt in a medium bowl. Heat butter in a large skillet over medium-high. Once butter is melted, add fruit mixture and cook, tossing occasionally, until fruit is golden brown and caramelized, 5–7 minutes.
Step 2
Add cider to skillet, reduce heat to low, and bring to a simmer. Cook, stirring occasionally and adding splashes of water if liquid reduces too quickly, until juices are syrupy and fruit is tender, 15–20 minutes. Let cool slightly, then stir in lemon juice.

Step 3
Compote can be made 3 days ahead. Let cool; cover and chill. Gently reheat before serving, if desired.

Back to TopJust made a batch of this and it's very good. However is quite sweet, so I used the juice of a whole lemon instead. I cooked the fruit for about half an hour and used 400ml of cider in the end. I will be making slightly more and using it next for the base of a crumble.

The review from FFRAN of Vermont makes me think FFRAN mis-read the recipe in the same way I did initially: Apple cider is sweet; no vinegar is listed in the ingredients. But I did review my pantry, and thought "I have apple cider vinegar, but no cider on hand." I need to go to the store or improvise. FFRAN needs to try the recipe again without the vinegar, using cider instead. My 3 fork rating is aspirational. Can't honestly rate it before making it, but wanted to comment before I forgot.

This recipe doesn't know what it wants to be. The amount of vinegar overwhelms all other flavors; using it for dessert is out of the question. Also, the peaches have become mush by the time the apples soften.
