Step 1
Preheat oven to 350° F. and butter and flour two 8-inch round cake pans, knocking out excess flour.
Step 2
In a bowl whisk together flour, baking powder, and cinnamon. In another bowl with an electric mixer beat together shortening and sugar until light and fluffy. Beat in milk and beat in eggs, 1 at a time, beating well after each addition. Add flour mixture and beat until smooth. Divide batter between pans, smoothing tops, and bake in middle of oven 30 minutes, or until a tester comes out clean. Cool layers in pans on a rack 10 minutes and invert onto rack to cool completely.
Make frosting:
Step 3
In a bowl with an electric mixer beat together cream cheese and butter until smooth. Gradually beat in confectioners' sugar until combined and beat in lemon zest and juice.
Step 4
Assemble cake, spreading frosting between layers and on top and side.

Back to TopThis recipe was a big failure for me, and I won't make it again. The cake was so dry and crumbly, I could hardly work with it. The frosting was good, but it didn't matter because the cake was useless.

The cake itself was good and easy to make, but it was dry and crumbly and not as moist as I would have wanted. Perhaps I didn't sift the flour finely enough, or the recipe should use more shortening or oil. The frosting called for entirely too much sugar. I only used about 3 1/4 cups, and that was more than enough. The frosting also got entirely too stiff and I had to add milk to soften it enough for beating and spreading.
