Brown Sugar Berry Cobbler

Does anything say straight-up summer like a cobbler? The one here gains complexity from a jumble of different berries and extra depth from dark brown sugar. Mixing the brown sugar with regular granulated sugar makes it easier to sprinkle on top of the biscuit topping before the cobbler goes into the oven; when it comes out, the tender, featherlight biscuits will be crowned by golden crunch.

Ingredients

Makes 6 servings

3/4 to 1 cup plus 1 teaspoon packed dark brown sugar (depending on sweetness of berries), divided
2 1/2 tablespoons cornstarch
2 3/4 pound mixed berries (strawberries trimmed and halved if using)
2 cups all-purpose flour
2 teaspoons baking powder
Rounded 1/2 teaspoon salt
1 1/2 sticks cold unsalted butter, cut into pieces
3/4 cup whole milk
1 teaspoon granulated sugar
  1. Step 1

    Preheat oven to 425°F with rack in middle.

    Step 2

    Stir together 3/4 to 1 cup brown sugar and cornstarch in a large bowl. Add berries and toss to coat. Transfer mixture to a shallow 3-quart baking dish and bake until mixture is hot, about 12 minutes.

    Step 3

    Meanwhile, whisk together flour, baking powder, and salt in a medium bowl. Add butter and blend with your fingertips or a pastry blender until mixture resembles coarse meal with some roughly pea-size butter lumps. Add milk and stir until dough just comes together.

    Step 4

  • So easy and delicious. I've been making this recipe since it appeared in Gourmet. I just made it with peaches, blackberries, and blueberries. Wonderful and quite pretty.

  • Easy recipe for entertaining. Made with fresh raspberries, blueberries, strawberries, cherries and nectarines. Cut brown sugar to 1/2 cup and cornstarch to 2 T. With a scoop of vanilla ice-cream, it's the perfect summer dessert.

  • Go to minus a few... hence 3 forks. No sugar at all, only sprinkle a tiny bit of cinnamon sugar on top of dough before baking. No corn startch either. Gets plenty think on its own. Use gluten free flour and almond milk. It is buttery heaven. Serve anytime as is or on top of or with a dollop of plain organic yogurt or, for real decadence, with ice cream.

  • I love how easy this is! The recipe seems very adaptable. I halved everything, used whole wheat flour, raspberries, cherries, and pears. It came out wonderfully!

  • Great recipe -- three forks only because it's a bit too sweet for our taste. Reduce the sugar and it's perfect. I made this with thawed frozen blueberries, raspberries, and blackberries. Will use this recipe again next time I make cobbler.

  • I'm making this for the 3rd time in 3 weeks, since berries are so great right now. Have used blueberries, raspberries, strawberries and peaches in varied amounts. May throw in some cherries today, since on sale for $.99 pound. Easily makes 8 servings, not 6. And this just calls for freshly whipped cream, not ice cream.

  • Loved this recipe! So easy to make, and I got rave reviews! I used a container each of blackberries, blueberries, & strawberries. I made this for a 4th of July bbq, and it was devoured! I can't wait to make this again, and try different combos of berries, and/or peaches next time!

  • I used 12 oz blueberries, 18 oz blackberries, and 14 oz strawberries. Tried an organic dark brown sugar for the first time that I had doubts about because it smelled so strongly of molasses, but the end result was just amazing. Everyone thought I'd put some "secret ingredient" in with the berries. So simple, too! Wash the berries and dump them in. Will definitely make this again!

  • I made this one hour before leaving for a bbq. It was so easy and was a hit. I used fresh strawberries I had and a bag of frozen mixed berries.

  • I made this cobbler for Easter. It was easy and delicious. I will make it again soon. I made one change to the recipe- I used 3 1/2 tablespoons cornstarch because I didn't want an overflow to occur in my oven and don't like watery desserts. It worked out very well.

  • Easy to prepare. Tastes delicious. I used an 11"x17" dish which worked fine. I think anything smaller would leave a mess. I used whipped cream with a stabilizer because ice cream wasn't practical for my event. Will make again. I would like to try nectarines or peaches with blackberries, possibly.

  • Yum yum! Quick, easy and delish! Just make sure to use the right size pan, or your oven will have berry goo all over the bottom like mine does now.

  • Great Recipe! Instead of using fresh berries I ended up using frozen berries and served it with vanilla ice cream, turned out great. Very fast and easy to make. Will definitely make it again.
