For a clear liquid, use coarsely ground coffee. (Finely ground beans make for a cloudier drink.)
Ingredients
Makes 5 cups concentrate
Special equipment:
Step 1
把咖啡粉放在一个大容器。Gradually add 7 cups cold water. Stir gently to be sure all grounds are moistened. Cover with a layer of cheesecloth. Let stand at room temperature for 15 hours.
Step 2
Remove cheesecloth and use it to line a fine-mesh sieve set over a large pitcher. Pour coffee through sieve into pitcher (do not stir); rinse jar and set aside. Discard cheesecloth with solids.
Step 3
Line same sieve with a large coffee filter and set over reserved jar. Strain coffee through sieve into jar. (It may take up to 45 minutes for all of the coffee to drip through; do not stir or coffee may become cloudy.) Cover and chill. DO AHEAD:Coffee concentrate can be made 2 weeks ahead. Keep chilled.
Step 4
Fill a glass with ice. Dilute 1 part coffee concentrate with 1 part milk, if desired, or water.

Back to TopI let the beans brew for about 36 hours, because I wanted a stronger taste. It was fantastic. I only had cone shaped coffee filters, so for the final filtering I had to tear them open and lay them around the sieve. Basket shaped coffee filters would be ideal for the job.

This was very good. I roast my own beans and I always search for the best way to juice them. This cold-brew recipe was it. It was simple though, and I felt offended by the author repeatedly telling me to concentrate. I'm NOT dumb!
