Grilled Bruschetta with Teleme, Honey, and Figs

The tangy Teleme cheese is great with the sweet figs and the honey. Making the bruschetta on the grill will free up the oven.

Ingredients

Makes 32

8 5 x 3 x 1/2-inch slices crusty country-style bread
Olive oil
1 8-ounce piece ripe Teleme cheese or Havarti cheese, cut into 8 slices
8 ripe fresh figs, stemmed, quartered lengthwise

  1. Prepare barbecue (medium-high heat). Brush both sides of bread with oil. Place bread slices directly on 1 side of grill rack; place sheet of foil large enough to hold bread slices on other side of grill rack. Grill bread until grill marks appear on bottom, about 3 minutes. Turn bread slices over and place bread, grilled side down, on foil. Place 1 cheese slice atop each bread slice; close barbecue and grill bread until cheese melts, about 3 minutes. Transfer bread to work surface; cut each slice into 4 pieces. Top each piece with fig slice. Drizzle lightly with honey and sprinkle lightly with freshly ground black pepper. Transfer to platter and serve.

Ingredient tip:

Teleme is a tangy cheese with a soft texture similar to that of domestic Brie. Because of its softness, it can be difficult to slice. Ask your cheesemonger to slice the cheese for you, or partially freeze the cheese before slicing it yourself. Teleme is available at some specialty foods stores and cheese shops. Havarti makes a good substitute.

  • I wasn't able to find teleme cheese but instead used havarti. It was delicious the first time and so I made it again--both got excellent reviews. Very versatile and goes well as an appetizer or a dish. I will definitely make this again!

  • we couldn't find teleme and used gruyere instead...it's a fabulous recipe that is great all year round. formal enough for a dinner party, casual enough for lunch. nice with cracked black pepper on top.

  • Extremely easy and loved the flavors of the cheese, figs and honey complementing each other. Used Havarti and dark honey and of course, fresh figs. Very rich and savory. Great start to a summer meal.
