Mixed Berry Cobbler

Mixed Berry Cobbler Hirsheimer & Hamilton

Serve topped with a generous scoop of vanilla ice cream.

Ingredients

Makes 8 servings

Filling:

1/2 cup sugar
1 1/2 tablespoon cornstarch
7 cups (1 3/4-2 pounds) mixed fresh berries (use no more than 1 ½ cups strawberries; halved if large)

Dough:

1 1/3 cups unbleached all-purpose flour plus more for surface
1/4 cup sugar plus more for sprinkling
1 1/2 teaspoons baking powder
1/2 teaspoons salt
5 tablespoons chilled unsalted butter, cut into 1/2" cubes
1/2 cup chilled whole milk plus more for brushing
Vanilla ice cream
  1. For filling:

    Step 1

    Position a rack in middle of oven and preheat to 400°F. Whisk sugar and cornstarch in a large bowl. Add berries to bowl and toss to coat. Transfer berry mixture to a 2-quart baking dish about 2" deep. Set aside to macerate while making dough.

  2. For dough:

    Step 2

    Whisk 1 1/3 cups flour, 1/4 cup sugar, baking powder, and salt in a medium bowl. Add butter; using fingertips, rub in butter until coarse meal forms. Add 1/2 cup milk and stir just until dough forms. Gather dough into a ball and transfer to a lightly floured surface. Gently knead 5 or 6 times, then pat or roll dough into a 9x6" rectangle. Cut dough in half lengthwise, then crosswise 3 times, forming 8 rectangles. Arrange biscuits 1/2" apart over fruit. Brush tops lightly with milk and sprinkle with sugar.

    Step 3

    Bake until fruit is bubbling and biscuits are just cooked through and golden all over, about 35 minutes. Let cool at least 30 minutes; serve with vanilla ice cream. DO AHEAD:Cobbler can be made up to 3 hours ahead. Rewarm at 350° if desired.

  • Perfect, not overly sweet. Will definitely make it again. Used raspberries and blackberries. Wish I’d made more biscuits, though. So good with whipped cream. Mmmm

  • Delicious! It was very juicy/runny at the end, but it didn't bother us at all. We used a mix of strawberries, raspberries, blueberries and blackberries. The biscuits on the top were crumbly and light. Would definitely make again.

  • This is my "go to" recipe for cobbler, which I make several times a year, and I've become known for, in my circles. The dough comes out differently each time, so I just use more flour if needed, but don't let it get too dry. I've learned what the best consistency is. I almost always use frozen berries, fresh ones seem too precious to bake. Like to eat them as is, fresh, unless I have an over abundance from my own garden!! None the less, frozen berries turn out just as delicious. I make all sort of combinations; mixed raspberry, blackberry, blueberry, and strawberry, or strawberry and rhubarb, or plum and berries, the combos are endless and based on what's in season or in need of being used up from my freezer. I rarely put sugar in the fruit mixture, except with rhubarb, and even then just a little, as ice cream on top creates a delicious taste combo of sweet and tart.

  • This is amazing. The berry flavor was so intense and perfect, and the cobbler dough a nice accompaniment. It might be nice to use flecks of vanilla bean in the dough, or orange zest would be a nice contrast, but just simple and delicious. A friend of mine who never eats dessert asks me to make this.

  • Ehhhh, ok. Fruit (blackberries and blueberries never really set up. Biscuit topping was crap. I would never make again.

  • Made this for Thanksgiving. Everyone loved it. The fruit doesn't congeal totally like I was expecting but everyone loved it and asked that I make it again next year.

  • This was a big hit! I made it with frozen blueberries, raspberries and blackberries. The dough was too wet to roll out so I spooned it over the top and brushed milk over the top, smoothing the dough out in the process. So easy and delicious!

  • This was fabulous! The dough wasn't too sticky at all, and I used fresh raspberries and strawberries from our garden, augmented with fresh blueberries and blackberries, which we picked! Loved it!!!

  • The dough is ridiculously sticky...I threw the first one out because I thought I must have done something wrong... the next time I added a little milk at a time until a dough formed. Much better.

  • Family pleaser. Easy with a topping that stays crisp the next day. I modified the filling: frozen pie cherries, thawed, cooked and thickened in a pan with sugar and a bit of cornstarch. Just dropped the dough on top, skipping the need to make the biscuits with the sticky dough. Now waiting for summer and blackberry season!

  • This was delicious, beautiful (jewel colors), easy. I used a mix of blueberries, blackberries, raspberries. The dough was, as some have noted, sticky, but I floured my hands before handling, and worked it on floured freezer paper.
