Mustard-Mascarpone Bruschetta

Fabio Trabocchi, Fiola, Washington, D.C.: "Dijon adds the right amount of spice to rich mascarpone in this easy spread."

Ingredients

Makes 3/4 cup

1/2 cup mascarpone
1/4 cup chopped fresh basil
3 tablespoons Dijon mustard
salt
pepper
  1. Whisk 1/2 cup mascarpone, 1/4 cup chopped fresh basil, and 3 tablespoons Dijon mustard in a medium bowl. Season to taste with salt and pepper. Spread on crusty bread.

  • I was very disappointed in this spread. As the other reviewer said, the dijon mustard was overpowering. We had planned to use it on a fresh crusty Italian bread but wound up using butter instead. We are saving this spread for sandwiches.

  • Tried out this weekend and took to a dinner w/ friends. For me the mustard flavor was too strong (used a mid-quality Dijon) and would have decreased by tablespoon. But for friends mustard taste was great. I doubled recipe and had plenty of leftovers for four people. The mustard flavor becomes more mild on second day and the basil flavor starts to shine through. So depending on how you like the two flavors, may want to make a day in advance. We omitted the salt bc the mustard was salty enough. Kept pepper which I think is mandatory as it gives a deeper balance. So taste before adding. Think this would be a great sandwich spread!
