Po-Tacos

Ingredients

Serves 4

4 sweet or russet potatoes

Filling ideas:

  • pesto, greek yogurt and manchego cheese
  • chicken chili with cheddar cheese
  • refried beans, sour cream, and salsa
  • chicken with bbq sauce
  1. Step 1

    Preheat the oven to 400 ° F.

    Step 2

    Poke several holes in the sides of the potatoes, place on a baking sheet lined with foil and bake for 1 hour.

    Step 3

    Slice the potatoes down the middle, scoop out half of the flesh, and fill with desired accompaniments.

  • 我不得不说这道菜没有冒犯我it did others. I love a stuffed sweet potato and a couple of these ideas I had not thought of. Have had the chicken/chili one, but the sweet potato with the re fried beans?? Good idea!

  • This is NOT a "Po-Taco" in the least. It's a recipe for a baked potato, as the last user noted AND then the fillings aren't even all taco fillings -- instead this is just a list of some stuff you can stuff in a potato. The British have been stuffing a great variety of items inside their "Jacket Potatoes" for years. In fact, they're so commonplace you can find Jacket Potatoes on ANY pub menu throughout the region stuffed with things like baked beans, curried chicken, tuna, chili and cheese, and prawn. In Scotland they even stuff them with haggis.   • This is literally just a recipe on how to bake a potato. I expected more than the equivalent of how to make toast. The photo is nice. However, a recipe for ANY of the displayed items would be much better than "bake potato add anything on top".
