Red-Onion Mojo

Ingredients

Makes 8 servings

1/2 cup extra-virgin olive oil
2 very large red onions, halved lengthwise, thinly sliced crosswise (about 5 cups)
1/2 cup fresh lime juice
2 cups (loosely packed) fresh cilantro leaves (from 1 large bunch)
  1. Step 1

    Heat oil in heavy large skillet over medium-high heat. Add onions and sauté until tender and translucent but not brown, about 10 minutes. (Can be prepared 2 hours ahead. Let stand at room temperature. Rewarm over medium heat before continuing.)

    Step 2

    Add lime juice to onions and simmer until liquid is slightly reduced, about 3 minutes. Season to taste with salt and pepper. Remove onions from heat. Stir in cilantro leaves.

  • Suprising and delicious! I made this as part of a full Carribean themed dinner, including coconut lime halibut and jerk chicken. It got many compliments. Was very simple to make too, best of all worlds!

  • I served it as a side dish to jerk chicken and mango chutney. It was a huge hit and an easy recipe to prepare after all the work that went into the jerk!

  • This is the the "condiment" to the Skirt Steak recipe...DO NOT SKIP THIS! It completes the dish. I followed the recipe exactly. I did make it approximately 3 hours before I served it and the flavors were amazing!
