Turkey Burgers with Chipotle-Chili Tartar Sauce

Chipotles give these burgers — from Hal's Bar & Grill in Venice, California — a terrific kick.

Ingredients

Makes 4 servings

3/4 cup mayonnaise
2 tablespoons extra-virgin olive oil
2 tablespoons minced red onion
2 tablespoons chopped fresh dill
1 tablespoon minced canned chipotle chilies*
1 tablespoon drained capers
1 pound ground turkey
4 whole wheat hamburger buns, split
4 red onion slices
8 plum tomato slices
2 bunches arugula (about 1 ounce)
  1. Step 1

    Whisk first 6 ingredients in small bowl. Season with salt and pepper. (Sauce can be made 2 days ahead. Cover and chill.)

    Step 2

    Prepare barbecue (medium heat). Form ground turkey into four 1/2-inch-thick patties. Sprinkle with salt and pepper. Grill burgers until cooked through, about 5 minutes per side. Grill buns until just toasted. Spread 1 tablespoon sauce on bottom half of each bun. Top each with 1 burger, then 1 more tablespoon sauce. Top each with 1 onion slice, 2 tomato slices, then 1/2 bunch arugula. Cover with bun tops. Serve, passing remaining chipotle tartar sauce separately.

    Step 3

    *Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores and some supermarkets.

  • Add a tablespoon or so of the sauce to the ground turkey before forming into patties. Love this recipe, I've been making it for years.

  • When I first tried this I was skeptical that this was a 4 fork worthy dish. I am now in the 4 fork camp and this has become a staple in our meal rotation. It's the sauce that makes the dish. I always make a little extra to have on hand for other things. I also lightly grill the red onion. Other than that I adhere to the recipe. Quick, simple and delicious. What's not to love?

  • My husband made these burgers tonight for dinner. They were absolutely delicious and oh that chipotle tartar sauce....really nice!

  • Really great recipe! I add some extra chipotle to the sauce, and use cilantro instead of dill. I also add some chopped shallot and chopped pickled jalepenos to the turkey mixture. Top the burger with bacon, avacado and pepper jack cheese. Yum!!

  • This is one of our favourite fast and easy weeknight meals.I have always followed the recipe exactly, except for an extra tbsp of chipotle as we like it spicy!I suppose it really is all about the amazing tatar sauce but the simplicity of the turkey is really key to the overall success of this recipe.Sometimes we make the sauce as a dip with homemade potato chips...yum!

  • I agree that it is all about the sauce,but I sub cilantro for the dill, use lettuce instead of arugula, because I live in an area where those items are not easily found. I have tried it the original way, too, and both are good.

  • I agree with si_chef below. This is all about the sauce. The burgers are tasteless. I also used dry dill. I found that the sauce overwhelmed the tomatoes, onion, amd arugala. Still looking for a moist and delicious turkey burger. This isn't it. The sauce is worth making for other dishes.

  • This burger is all about the Chipotle- Chili Tartar sauce! I substituted 2 teaspoons of dried dill for fresh and used lettuce instead of Arugula. I also put a slice of extra sharp (white) cheddar cheese on the burgers.

  • The sauce is amazing! Slightly spicy, it makes the whole thing work when the turkey burgers can be quite bland to regular beef eaters.

  • Made this last night to rave reviews. I didn't have arugula and used some lettuce I'm growing, but even so it was terrific. Obviously, the sauce makes the dish - yum!

  • I changed this recipe a bit and the results were incredible. I added about half of a diced apple and a diced onion to the turkey, as well as some cumin. Left the dill out of the tartar sauce because I didn't have any. I can't wait to make this again. It's easy and fast, and with such wonderful flavor.

  • 4675 Sorry I said corn for this recipe, but I was referring to the chicken corn chowder which is outstanding and with fresh corn - to die for. as are as this recipe goes, I used small buffalo burger and used this sauce with carmelized onions - yummy
