3-Ingredient Microwave Caramel Sauce

This easy recipe gives you caramel sauce anytime you want it. Use it to make ourGooey Chocolate Microwave Mug Cake, or drizzle over ice cream, pancakes, or into your morning mug of coffee.

Ingredients

2 heaping tablespoons

1 tablespoon unsalted butter
2 tablespoons light brown sugar
1 tablespoon heavy cream
Pinch of salt

Special Equipment

A 12-ounce microwave-safe mug (preferably thin-walled) or deep bowl
  1. Step 1

    Place butter in mug and microwave on high 30 seconds. Add brown sugar, cream, and salt; stir to combine, and microwave on high 30 seconds. Carefully remove, stir, and microwave on high 15 seconds. Stir and serve.

  2. Do Ahead

    Step 2

    Caramel sauce can be made 1 week ahead. Store in an airtight container and chill. Gently reheat to use.

Cooks' Note

To make 2/3 cup caramel sauce, quadruple the ingredients in a 24-ounce microwave-safe mug or deep bowl and increase each cooking time by 15 seconds.

This recipe was developed using a 1200-watt microwave. If yourmicrowave wattage is lower, you may have to increase cooking time.

  • Scaled this recipe up to 1 cup for use in the chai spiced monkey bread recipe. So easy. Will be my go to caramel recipe for all future caramel needs. I did make an error (too many things on my mind) and combined all ingredients in the bowl before microwaving. The butter had not been microwaved first.

  • I prefer to use a bit of milk instead of cream and use 1 tbsp white sugar and 1 tbsp brown sugar for color, sugar doesn’t always melt fully so after I made the recipe a few times (because it’s a small yield) and then reheated it once I finished, great on popcorn!

  • Easy and delicious. Made it twice. First exactly as written and came out perfectly. Second time I tried to double the ingredients. It almost boiled over the top of the mug. That would have been a messy disaster but luckily did not happen. I will be sure not to increase ingredients without using a larger bowl if I want a larger quantity in the future. I also added a couple drops of vanilla and pinch of coarse sea salt to the second batch. Yum. Am serving it with warm apple pie and ice cream.

  • I tried this tonight and cannot figure out the low ratings or the complaint about the color. I wish it was possible to upload a photo. Mine is a beautiful caramel color. It was delicious right out of the microwave even though it was a little thinner. Fifteen minutes or so in the fridge and the consistency is nice. My only question, did anyone else find not all of the sugar dissolved?

  • Delicious! I botched my over the stove caramel and made this in a quick fix. I used it for caramel machiotos, frappicinos, and popcorn. So good! Will be making this from now on.

  • I almost didn't make this because I saw the overall review was so low. Really glad I checked it out anyway and saw the reason it was so low was because of one incredibly sour reviewer. I thought this was amazing, particularly over my mug cake. If you want something fast, this is it!

  • I used coconut oil and dark brown sugar and almond milk instead of heavy cream. I also added cocoa powder. After much stirring it was quite smooth and delicious. It was so good I didn't bother with scooping out the ice cream and ate it right out of the cup!
