Citrus Cookies

That's a whole lotta citrus in this here recipe. If you want to make a citrus cookie that tastes like you climbed up a tree and plucked a cookie off the branch, that's what it takes.

Ingredients

Makes 1 1/2 dozen cookies

1/2 pound (2 sticks) unsalted butter, at room temperature
2 cups sugar
1 large egg
10 lemons, zested
4 limes, zested
2 oranges, zested
2 1/2 cups all-purpose flour
1 1/4 teaspoons kosher salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
Lemon Granola(optional)
  1. Step 1

    1. Preheat the oven to 375°F.

    Step 2

    2. Combine the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment and cream on high until homogenous, about 3 minutes. Add the egg and all of the citrus zests and mix until just combined, about 1 minute.

    Step 3

    3. Add the flour, salt, baking powder, and baking soda, mixing until just combined, about 30 seconds. Mix in the granola, if using.

    Step 4

    4. Portion 2 3/4-ounce scoops of dough 2 to 3 inches apart onto a greased or lined baking sheet. Bake the cookies for 9 to 10 minutes, until light golden brown. Cool completely on the pan.

Cook's Note:

Use a Microplane or the smallest holes of a box grater to zest citrus. Use steady, even force, rotating the fruit as you zest and being careful to remove only the outermost colored layer, not any of the bitter white pith.

  • I am confused by "Portion 2 3/4 ounce scoops". That is a very large cookie and I don't believe I could eke out 18 scoops of that size. I Used a 2 tablespoon scoop and the result was 24 good sized cookies. Cookies are delicious.

  • These cookies are phenomenal. They taste like Fruity Pebbles, but in a natural and delicious way. Don't omit the granola. It's worth the extra step. The fact that this recipe requires zesting 19 citrus fruits, but still has a 4 fork rating with 100% of people saying they would make it again shows how delicious they are. Very much worth the effort.

  • Well, I LOVE citrus, so I looked this up. This looks very good. I just wish the juice had been used as well--even if just to make a citrus glaze for the cookies. I look forward to making this recipe. The granola would add a bit of a crunch, but is probably unnecessary. Thanks all.
