Smoked Trout-Avocado Dip

If you're not the kind of person who keeps canned fish in your pantry at all times, this is the recipe that will convert you. While smoked trout is great in this dip, any canned fish (think sardines, mackerel, or tuna) will work—just make sure it's packed in oil. Crackers optional.

What you’ll need

Ingredients

2 servings

2 3-oz. tins smoked trout
2 scallions
1 lemon
1 Tbsp. mayonnaise
1 tsp. kosher salt, divided
½ medium ripe avocado
Freshly ground black pepper
Crackers (for serving)
  1. Step 1

    Pour off excess oil from2 trout tins, then place trout in a medium bowl.

    Step 2

    Thinly slice2 scallionson a diagonal. Add half to bowl with trout; reserve remaining scallions for serving.

    Step 3

    Using a microplane, finely gratehalf of lemoninto bowl with trout.

    Step 4

    Cut lemon into quarters and remove any seeds. Squeeze 2 quarters over trout mixture.

    Step 5

    Add1 Tbsp. mayonnaiseand½ tsp. saltand toss gently to combine.

    Step 6

    Finely chop½ avocado. Transfer to a small bowl. Squeeze juice from remaining 2 lemon quarters over. Season with remaining½ tsp. salt.

    Step 7

    Top dip withavocadoand a fewgrinds of pepper. Serve withcrackersalongside.
