Bacon-Wrapped Pig Wings

Who says pigs can't fly? Take a few boneless pork chops, add some bacon and a little creativity, and Pig Wings are on the menu! The bacon adds great flavor and keeps the loin meat from getting dry. These look delicious and are a little unusual, so they make a fabulous smoked appetizer with barbecue sauce for dipping. The kids will love them.

Ingredients

Makes 12 servings

Four 1-inch-thick boneless pork chops
12 slices bacon (do not use thick sliced)
Barbecue sauce, for dipping
  1. Step 1

    Cut each pork chop into three strips. To wrap the "wings," start by overlapping the bacon on one end of a pork strip, then wrapping it up and around in a candy-cane fashion. Secure the bacon at the top with a toothpick. If you need to use a toothpick at both ends, go ahead. Season the bacon-wrapped wings liberally with the rub.

    Step 2

    Prepare your cooker to cook indirectly at 235°F using medium pecan wood for smoke flavor. Place the wings directly on the cooking grid and cook for 90 minutes, or until the bacon is cooked. You may want to finish these on a hot grill or under the broiler to crisp the bacon. Serve hot with barbecue sauce for dipping.

  • I used bone-in pork chops, sliced into strips, wrapped with bacon and liberally sprinkled head country seasoning, garlic powder and creole seasoning over them and baked in toaster oven. I put 4 TBs of liquid smoke and 2 cups of water in a basin at the bottom of toaster oven and baked the “wings” on a rack above it. Baked at 275 for 90 min and 375 for 15 min to crisp the bacon. Added head country bbq to each wing and enjoyed!! Yum!

  • I come from a state where Bar-B-Que reigns in all areas so I am usually a little skeptical about recipes which refer to things as "Barbecue". I made these last night and we have a new favorite way to cook pork!!! I did make a couple of changes to meet our dietary needs and they are awesome! 1. I used Coconut Palm sugar instead of Sugar in the Raw. 2. I cut the Kosher salt to 1/4 cup. 3. I do not have a smoker, so I improvised! I put a rack in a baking dish and put the "Pig's Wings" on the rack. In the bottom of the baking dish I put 2 tbls. of Liquid Smoke and 3/4 cup of water. This gave them the smoked flavor! 4. I covered the baking dish with foil to keep in the flavorings and moisture! I cooked them on 235 degrees for 90 minutes while covered. I uncovered and cooked them on 350 degrees for 15 minutes! My family is already asking when we can have them again! Next time I will surprise them and put the rub on chicken!! Thanks for a wonderful recipe!!

  • Perfect for our 10 day camping/fishing journey at the lake. I will smoke at home and put in containers to pull out for the grill after fishing. Will be great appetizers before the fish!
