Banana, Coffee, Cashew, and Cocoa Smoothie

This power-breakfast smoothie will be extra smooth if you soak the nuts and oats in water overnight; drain before proceeding.

Ingredients

Makes about 2 cups

1 banana, preferably frozen
2 Medjool dates, pitted
½ cup cold-brew coffee
¼ cup raw cashews, preferably soaked overnight
3 tablespoons old-fashioned oats, preferably soaked overnight
1 tablespoon unsweetened cocoa powder
Pinch of ground cardamom
Pinch of kosher salt
  1. Using smoothie or ice crush setting, purée banana, dates, coffee, cashews, oats, cocoa powder, cardamom, salt, and ½ cup ice in a blender until smooth.

  • My husband and I love this smoothie. We’ve made this for years. Using bananas that are just barely ripe gives less banana flavor. I use a powerful blender that makes this very smooth even if I forget to pre soak the cashews and oats.

  • This was ok but I was disappointed. I thought it would have a stronger coffee/chocolate taste. I did find that while the banana flavor seemed strong at first sip, it dissipated as I continued drinking the smoothie and my taste buds acclimated. I was not bothered by the texture that the oatmeal added.

  • I wasn't a fan. The banana flavor was very strong and the oatmeal created a grainy texture even with the pre-soak. I don't think it's worth the trouble of having to think ahead the night before and set out the cashews and oatmeal to soak.

  • Delicious! This is now one of my favorite smoothies. I didn't think there would be enough liquid to make this work, but there absolutely was. I didn't bother to soak the oats or the cashews.

  • Insanely delicious. It was easy to make the cold brewed coffee in the french press the night before. I used almonds because I didn't have cashews, decreased the coffee (but I had made it very strong) and added a touch of almond milk. Add a bit of protein powder if you'd like.
