Bibb Lettuce, Chicken, and Cherry Salad With Creamy Horseradish Dressing

This completely cravable summer dinner salad hits all the right spots of creamy, crunchy, sweet, and spicy.

Ingredients

4 servings

For the dressing:

1/2 cup mayonnaise
2 tablespoons fresh lime juice
2 tablespoons prepared horseradish
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

For the salad:

1 tablespoon extra virgin olive oil
1/2 cup panko (Japanese breadcrumbs)
1/4 teaspoon kosher salt
1/8 teaspoon cayenne pepper
2 cups shredded cooked chicken (about half of a 2 1/2-pound rotisserie chicken)
8 cups Bibb or Boston lettuce leaves (from 1 large or 2 small heads)
2 cups cherries (about 10 ounces), pitted, halved
5 radishes, thinly sliced
1/4 cup coarsely chopped fresh chives, divided
  1. Make the dressing:

    Step 1

    Purée mayonnaise, lime juice, horseradish, salt, and pepper in a blender until smooth. Set aside.

  2. Make the salad:

    Step 2

    Heat oil in a small skillet over medium-high. Add panko and cook, stirring frequently, until golden brown, 4–5 minutes. Season with salt and cayenne and transfer to paper towels; let cool.

    Step 3

    Combine chicken, lettuce, cherries, radishes, half of the panko, and half of the chives in a large bowl. Drizzle with dressing and gently toss to coat. Sprinkle with remaining breadcrumbs and chives.

  • Second time making - both times a hit. Unlike a lot of recipes where you want to tweak one or two things this recipe is Delicious as is. The buttery Bibb lettuce is a MUST.

  • Made this recipe this evening and made it exactly the way it said to do it, except I used blueberries instead of cherries (not a fan) and it was fabulous. I want to put toasted panko and that dressing on every salad I make!

  • Made this twice exactly as written except I left cayenne out of panko ONLY because one of my guests is a pain in the neck! I would add it next time. A beautiful salad especially with the watermelon radishes. Not altogether sure why we need to process the salad dressing-Will make it again!

  • Love this recipe!!! Made it exactly as stated and it turned out great. My husband who usually doesn't say much about food, took one bite and said it was delicious. It's now our new favorite Summer salad.

  • One of the best salads I've ever made! Great balance of flavors and textures. The mix of panko with the creamy dressing and slight acidic hit is sublime. This will be one of my go to recipes during cherry season!

  • Dressing was bitter, radishes were lost, panko added nothing, labor-intensive prep, worst Epicurious recipe I've ever made.

  • This is really a 3.5. Delicious and satisfying as is. I can see that almonds would be a great addition. Personally I didn't like the cayenne--it added heat but with an off flavor. I'm cutting back next time. This salad would work with any stone fruit. Refreshing summer dinner.

  • Surprisingly and satisfyingly delicious. I made this for my wife almost exactly as written. I used chicken breasts simmered in broth instead of half a rotisserie chicken, and I used about half the chives because that's what I had. My wife absolutely loved it, and I will definitely make it again.

  • Making this again tonight. I used red leaf and spinach and baby arugula last time and it was great.So looking forward to it with the amazing cherries this year!! 4 forks for sure!!

  • I want 'dat. You know what I'm gonna' do? I'm gonna' take a couple of fresh figs; I'm gonna' cut 'em in half, and I'm gonna' put them where those radishes are. Then, I'm gonna' whip-up a Gorgonzola Vinaigrette, and I'm gonna' liberally float that over the top...wait for it...wait for it... ...then, I'm gonna' eat it!

  • I like the idea of the fresh cherries in the salad (and finally I have been able to use the cherry pitter which I have had for about 30 years). I substituted toasted slivered almonds for the Panko as suggested by another person. For the most part, I enjoyed it however the horseradish doesn't 'do it' for me (and I am a true fan of horseradish and use it liberally in my kitchen) It adds absolutely nothing to the salad. Will work on another accent for the mayo dressing. Will make it again, but with another dressing.

  • Terrific. I skipped the panko, used toasted, slivered almonds instead, and added a generous shake of cayenne to the dressing. Next time I'm going to try it with arugula.
