Big-Batch Hard-Boiled Eggs

If you’re trying to meal prep for the week or cook a large number of eggs at the same time, steaming yields the most consistent, perfectly jammy results.

Ingredients

Makes 24

24 large eggs
  1. Step 1

    Fill a large pot with 1" water and fit a steamer basket into pot. Cover and bring to a boil over high heat. Carefully place eggs in steamer basket. Cover with a tight-fitting lid and steam 12 minutes.

    Step 2

    Using tongs, immediately transfer eggs to a large bowl filled with ice water to stop cooking. Let sit until cool enough to handle, about 10 minutes. Peel.

    Step 3

    Do Ahead:Eggs can be steamed and peeled 1 week ahead. Store in an airtight container and chill.

  • I have always boiled my eggs for hard-boiled, but decided to try this. Followed recipe exactly and 12 mins yielded less than hard-boiled eggs. They weren't bad, but definitely far from hard-boiled. Unfortunately, these were for Easter baskets. UGH

  • I don’t have a steamer basket so have brought enough water to cover eggs by at least an inch to a boil, then add the eggs directly from the fridge, bring them to a boil, boil 12 minutes, then plunge them into ice water and peel as soon as they are cool enough to handle. I often make 30 eggs at a time and they always turn out and are easy to peel.

  • I too have been using this method for a couple years now, and it never fails. I always cook a dozen at a time and they are perfect after 12 minutes. Never have a problem with peeling whether the eggs are fresh or not.

  • I've been using this method for a couple years now, and always get great results -- the eggs peel easily as well. The amount of time may vary based on the batch size and pot size -- mine are perfect in 16-17 minutes.
