Ingredients

2 tablespoons flaky sea salt
1 teaspoon chipotle chili powder
Zest of 2 limes
  1. Toss 2 tablespoons flaky sea salt and 1 teaspoon chipotle chili powder on a baking sheet. Finely zest 2 limes over. Bake in a 350°F oven, stirring occasionally, until lime zest is dry, about 5 minutes. Let cool.

  • Mix the salt and lime zest together first, using your hands to blend thoroughly and release the lime essence. Then add the chipotle chili powder and repeat the blending process. If you stir the powder in with a spoon, it won't adhere to the salt.

  • Be sure to blend the lime zest and salt together by hand, then add the chipotle chili powder and blend again by hand; this ensures that the lime essence is released and the powder adheres to the salt.

  • Mixed the lime zest with the salt first, using hands to crush the salt and zest together. This releases the juice from the zest to blend better with the salt. Then added the chipotle chili powder, repeating the hand blending. If the chili powder is simply stirred in, it will tend to settle out from the salt, leaving hot spots in the seasoning. Add warmth to whatever you use it with, infusing the overall taste with a nice smokiness.
