Chipotles ("chi-POTE-lays") are red-ripe jalapeños that have been smoked and dried. Chipotles canned in the sauce calledadobotake the sweet heat in a more piquant direction.
Ingredients
We whiz up a can of the chiles (with sauce) in a blender, and the resulting purée keeps in the fridge forever. Stir a smidgen into a small bowl of mayo andn give your imagination free rein.

Back to TopWhy bother whizzing up a lot - just chop a couple of chipotles, and a smidgen of sauce and blend it with mayo. A little salt and pepper to taste. Fantastic. I make it all the time for my husband's sandwiches.
