Cranberry Relish with Grapefruit and Mint

Cranberry Relish with Grapefruit and Mint Tim Morris

Quickly candied grapefruit peel adds a fresh zing.

Ingredients

Makes about 2 2/3 cups

2 large pink grapefruits
1 cup sugar
2 1/2 cups cranberries (about 10 ounces)
2 tablespoons chopped fresh mint
  1. Step 1

    Using vegetable peeler, remove peel (pink-yellow outer layer only) from 1 grapefruit in strips. Cut peel into 2-inch-long, 1/8-inch-wide strips (about 1/2 cup). Squeeze 1 cup juice from grapefruits.

    Step 2

    Stir 1 cup sugar and 1 cup water in medium saucepan over medium heat until sugar dissolves. Add grapefruit peel; bring to boil. Reduce heat; simmer until peel is soft, about 15 minutes. Add 1 cup grapefruit juice and cranberries; bring to boil. Reduce heat and simmer until berries burst, about 10 minutes. Transfer to medium bowl. Stir in mint. Cover; chill until cold. DO AHEAD:Can be made 3 days ahead.Keep chilled.

  • Made this at a family Thanksgiving get together two years ago and my (now 9 year old) daughter has requested it annually. She loves mint so I usually add a bit more. I love ruby red grapefruit so it's a win-win. I find the tang of mint and acidity of the grapefruit brighten up the heavy (in a good way) Thanksgiving feast.

  • this recipe didn't live up to the 4 fork rating. No one at our table touched it and I just ate it because someone had to try it. It won't make my Thanksgiving menu next year.

  • The mint, if you add it directly after cooking as the recipe directs, is completely overwhelmed by the other flavors. I recommend adding it after the relish has cooled and before serving. three forks because the two flavors, cranberry and grapefruit, seem to compete rather than to combine and create a new flavor.

  • I cooked this much longer...after the total 25 minutes recommended, the berries were still intact and the liquid was watery. An additional 30 minutes, cooking very slow, caused the liquid to reduce and thicken and the berries to burst and absorb the sugar and grapefruit flavors. It was delicious. A wonderful update to an old favorite!
