Duck Pizza with Hoisin and Scallions

Get your fix of two favorites (Chinese and pizza) in one crusty canapé—for fewer than 150 calories.

Ingredients

Makes 8 servings

1 duck (or chicken) breast, fat trimmed
1/2 teaspoon Chinese five-spice powder
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 teaspoon olive oil
1/2 pound whole-wheat pizza dough
3 tablespoons hoisin sauce
1 cup baby spinach, chopped
1/2 cup shredded part-skim mozzarella
1/2 red bell pepper, cored, seeded and diced
4 scallions, thinly sliced
2 tablespoons black sesame seeds
  1. Heat oven to 400°F. Sprinkle duck with five-spice powder, salt and pepper. Heat oil in a medium skillet over high heat. Cook duck until browned, 4 to 5 minutes per side. Transfer skillet to oven; bake duck until outside is cooked but inside is rare, 8 to 10 minutes. Cool 4 to 5 minutes. Thinly slice on the diagonal into 8 pieces, then cut each in half. Set aside. Form dough into 8 even balls, then flatten to form 3-inch disks and place on an ungreased baking sheet. Spread hoisin sauce on crusts with a pastry brush. Top with spinach, cheese, bell pepper and duck. Bake until cheese is melted and bubbly, 20 to 25 minutes. Remove and garnish with scallions and sesame seeds.

  • This is a big hit at our house. I also went with searing the duck breast. The time in the oven on the pizza will cook it nicely. Also substituted arugula for the spinach (had arugula on hand). Killer dish!

  • Cheat version: Purchased BBQ Duck from Chinatown.Hoisin sauce on pizza dough, caramelized onions, Goat Cheese & Mozzarella toppings. Once baked, added fresh Arugula & thinly sliced (on diagonal) green onions to cut through richness.

  • This was really good. Next time I will NOT roast the duck. I will pan sear, sliced, put on pizza and bake. We thought the duck was a bit over done.

  • I make a variety of different pizzas. I tested this on the family on Saturday, and everyone LOVED it. All three members decided it was the BEST of my pizzas. It's sweet. It's savory. It's got that crispy scallion taste. Absolutely exquisite. And the duck - the duck is fatty and lovely on top. Very nice indeed.

However, since I'm not a duck expert and I was worried about it being rubbery, so I opted to prepare it with the slow cooker (I use this for risotto as well). I cooked it with some stock and 5 spice on low for about 6 hours and then shredded it. I gave this recipe three stars because I think it needs more flavour to balance out the hoisin: next time I will put a couple of bulbs of roasted garlic and something hot, like banana peppers to cut the sweetness. I suppose some acidity would work too, but I prefer heat. Otherwise, great! Will make again!

  • Used leftover duck seasoned lightly w/Chinese five-spice and homemade pizza dough (in bread machine) and shaped into l large pizza. Followed rest of recipe except baked 475 degrees for 15 minutes. Excellent and different. Will make for company as appetizer.

  • Made this for a cocktail party with the small pizzas cut into quarters to make them finger food. I prepared all the ingredients the night before and assembled the pizzas immediately before the party. I coated the bell pepper with high quality olive oil and roasted them ahead of time. These were easy, unusual, and a huge hit with guests.

  • Made this Christmas Eve and it was so festive looking and delicious! I sauteed chicken as I didn't have duck and it was still wonderful. The black sesame seeds are so fun.

  • Made this pizza as a large pizza and it was amazing. Very easy. Did not season with the Chinese Five spice and prepared with more hoisin sauce than recipe called. Tasted like Peking Duck on bread!

  • This recipe was super easy and turned out great! I substituted carmelized shallots for the scallions (I happened to have had some at home already) but the spinach made up for the lack of color shallots bring to the presentation. I adapted the reciped to make one large pizza instead of several smaller ones as I believe the recipe indicates.
