Ham Biscuits

This is a surefire Southern way to use leftover ham and either leftover or freshly baked biscuits. Sometimes the biscuits are large and the ham pieces merely roughly cut chunks. In this recipe the biscuits are made the size of silver dollars, the ham is thinly sliced and neatly trimmed, and the biscuits are served with tiny dollops of spicy mustard and freshly grated horseradish. Voilà! The "grab 'em and go" breakfast treat that has been imitated by many popular food chains is transmuted into an elegant hors d'oeuvre. Large or small, they're mighty good eating.

Can be prepared in 45 minutes or less.

Ingredients

Makes about 20 ham biscuits

20 silver dollar-size biscuits
spicy prepared mustard to taste
freshly grated horseradish to taste
20 pieces thinly sliced baked ham (about 1/2 pound)

SILVER DOLLAR SIZED BISCUITS

2 cups all-purpose flour
1 tablespoon baking flour
1 teaspoon salt
1 tablespoon sugar
1/4 cup lard
1/2 to 3/4 cup milk
  1. Step 1

    Preheat oven to 400°F.

    Step 2

    In a bowl whisk together flour, baking powder, salt and sugar and with a fork or pastry blender blend in lard until mixture resembles course meal. Add milk, a little at a time, stirring until dough just pulls away from side of bowl.

    Step 3

    Roll out dough 1/2 inch thick on a lightly floured surface. Cut out biscuits with a 1 1/2-inch round cutter and transfer to an ungreased baking sheet. Reroll scraps and cut out more biscuits in same manner.

    Step 4

    Bake biscuits in middle of oven until pale golden, 10 to 15 minutes. Makes 20 silver dollar-size biscuits.

    Step 5

    Split biscuits in half and spread lightly with mustard and horseradish. Put ham between biscuit halves.

  • Run, don't walk away from this recipe!! I doubled it, to play with the amounts of other ingredients. YUK! Dry, Boring, lack of every thing!...I tried garlic. I tried food prossessing all off the ingrediants! I added cheddar cheese. And finally I brushed the little suckers with egg wash and "goya ham flavor conentrate" Hungry diners ate them...but I did not get usual the accolades my cooking gets! "Pigs in a blanket" would have went over better!!! Some simple recipes (like this one I was hoping) work well...some are our standards. A crisp apple in fall with a nice cheddar cheese. Warm apple pie with a dallop of vanilla ice cream! This recipe is non of those!

  • I think the 1 Tbsp of baking flour should be 1 Tbsp. of baking powder. For a real southern treat, use a cured ham (preferably Smithfield) and replace the mustard/horseradish with a dab of apricot preserves. The salt of the ham with the sweet of the apricot all on a fluffy biscuit -- now that IS good eating!
