Molasses Baked Beans with Ginger

Ingredients

Makes 8 servings

4 slices thick-cut bacon, cut crosswise into 1-inch pieces
1 1/2 cups chopped onion
1/3 cup minced peeled fresh ginger
2 (28-ounce) cans original flavor baked beans
1/2 cup mild-flavored (light) molasses
2 tablespoons plus 2 teaspoons apple cider vinegar or distilled white vinegar
  1. Set oven rack in lower middle position; preheat to 325°F. Heat heavy large pot over medium-high heat. Add bacon; cook until crisp, stirring often. Transfer to paper towels to drain. Pour off all but 2 tablespoons drippings from pot. Add onion; sauté until beginning to soften, about 5 minutes. Add ginger; sauté 1 minute. Stir in beans with juice, molasses, vinegar, and bacon; bring to simmer. Transfer to 11x7x2-inch glass baking dish. DO AHEADCan be made 1 day ahead. Cover and chill.Bake until top is dark brown and bubbling, about 2 hours. Let stand 15 minutes; serve.

  • Really fantastic recipe. I've made it several times, even doubled and tripled it. Always comes out great. I use the Bush's Homesyle beans, rather than maple or other sweeter types. The recipe is excellent as written. I don't change a thing.

  • I made this with plain beans from cans and added 1/2 c barbeque sauce. Since I was only making 1/2 recipe I cut the ginger in 1/4 and the baking time in half. It came out great! This is a go-to recipe.

  • I made this for a family get together - received rave reviews from all! I typically do not like baked beans because they are soupy and salty, but this is full of rich flavor and not soupy at all. Would make this again in a heartbeat!

  • Good flavor but EXTREMELY rich. Too much sugar for me. If you want some REALLY rich beans which are easy, these were great!

  • Delicious and loved the ginger flavor. I cooked the bacon in the microwave so it would be nice and crisp, then added the 2 T drippings to the pan and it worked well. Would definitely make these again.

  • Yummy! As a southern girl living in Chicago, I don't really get good baked beans all that often. So, I have to make them myself. The thought of these make my mouth water. Definitely a winner. I served them to a guest who normally doesn't like baked beans and she asked for seconds.

  • I'm not a huge baked bean fan but these were terrific. Everyone enjoyed the unexpected zip of the ginger. I accidently shortcut the directions and didn't cook the bacon, onion and ginger before adding to the beans and it still came out great!

  • Easy to make! A unique twist on a common summer side dish! My family LOVED it! I can't wait to make it again. Because it was SO hot, and I couldn't stand the thought of turning on the oven. I use the crock pot and loved the way the flavors blended.
