No-Bake Energy Bites with Ginger and Turmeric

These superfood-filled, protein-packed bites are perfect for a pre-workout boost or mid-day recharge. If you're sensitive to caffeine or will be serving kids, feel free to skip the chocolate-coffee coating.

Ingredients

Makes about 3 dozen bites

3/4 cup dark chocolate-covered espresso beans (optional)
1/2 cup unsweetened coconut flakes
1/2 cup raw almonds
1/2 cup raw pumpkin seeds (pepitas)
1 1/2 cups pitted dates (preferably Medjool)
1/4 cup chia seeds
1/2 cup creamy almond butter
1 teaspoon ground ginger
1 teaspoon ground turmeric
1/2 teaspoon kosher salt
  1. Step 1

    If using, pulse espresso beans in a food processor until very finely ground. Transfer to a rimmed baking sheet or plate; set aside.

    Step 2

    Pulse coconut, almonds, and pumpkin seeds in food processor until very coarsely chopped. Transfer to a medium bowl.

    Step 3

    Pulse dates in food processor until finely chopped. Scrape down sides of bowl and add chia seeds. With the motor running, slowly stream in 1/4 cup very hot water and process until a paste forms. Add almond butter, ginger, turmeric, and salt; process until very smooth. Add coconut mixture and pulse until just combined.

    Step 4

    Scoop date mixture by the level tablespoon, roll into balls in between palms, then roll in reserved chopped espresso beans, pressing slightly to adhere. Transfer to a rimmed baking sheet or plate and chill at least 1 hour.

    Bites can be made 7 days ahead. Chill in an airtight container, or freeze up to 3 months.

  • Delicious, well rounded and you can substitute various dried fruits for others even though tasty as is. The recipe says - makes about 3 dozen (36) and 12 servings, so 254 calories for 3 balls or 84 calories per ball.

  • These are great to have on hand for a quick bite to stave off hunger. Easy enough to make and taste great. Kept some in the freezer -- they can actually be eaten pretty soon after coming out of the freezer. Will be making again...and again.

  • Clarification of the nutritional info, please. 254 calories for what? One or twelve. And, yes, as another reviewer asked, where’s the sugar content. Sounds like a great recipe, but this is for is important if you’re providing nutrition info. Thanks.

I came across this recipe first on the LEAN Nutraceuticals blog where they substituted the store bought turmeric spice with their Turmeric Curcumin Fusion as a way to supercharge the benefits. The cayenne pepper contained in the Fusion added just the right amount of heat to these already tasty treats!

  • These went over well at work, not too sweet but satisfying for a mid morning snack. They did dye my hands slightly yellow... And after a day in the fridge the two leftover balls had a different texture, with the chia seeds coated in a bit of gel-like stuff, from absorbing moisture, I assume. I will make them again for sure and try a drizzle of dark chocolate on the outside- no espresso beans available here.

  • Made these a week ago, easy and very tasty. You do not taste the coconut or the turmeric and only a hint of ginger. The flavour is very balanced with no overpowering ingredients. Reminds me of Lara bars. The chocolate covered beans are a must. Love them!

  • These are my go-to bites for something quick before heading out for a morning walk with my dog. They are delicious and really stick with you. Don't leave out the Dark Chocolate Espresso beans. They make them so tasty and interesting. I was able to get all of the ingredients for these at Trader Joe's. I highly recommend them.

  • Fantastic. I could not lay hands on pepitos so I used sunflower seeds. I will not roll them in crushed chocolate-covered espresso beans next time but will just mix it in. Way too messy in my warm summer kitchen. Everything melted and globbed (even though I kept it in the freezer while mixing the other ingredients). I also forewent chia seeds because I didn't have them. Basically, any superfoods you have on hand can be blended into these healthy engergy bites to Save The Day when you are hungry and want a candy bar and have this instead!! Delicious, supreme. I will experiment with more and more turmeric until I find my tolerance level for tasting it too much! Very subtle in this amount.

  • Ever since I saw this recipe I knew I had to make them! I did so last night, and they came out exactly how I envisioned!!! Super easy to make, and delicious! like another reviewer mentioned, if you're not big on coconut or turmeric you will barely notice distinct flavors from either. Actually, I think I will add a bit MORE turmeric next time. I also added a bit of cayenne too, and next time I'll add even more. the only substitution I made was flax seed for the chia seed, since that's what I had on hand. Will definitely make these again!

  • These are so delicious and fun to make! The ground chocolate espresso beans are a must. To the cooks who don't like coconut or turmeric, once the mixture is combined, you don't taste the individual flavors. All the flavors just blend together beautifully and taste wonderful.

  • These were a big hit with a large group of health-conscious people. I made some modifications, preferring cinammon to ginger, for example. This is not a recipe that demands precision. On technique, I recommend getting the pulverized chocolate-covered espresso beans into the freezer right away. As you work with it later, it will begin to melt, so having the chocolate as cold as possible and using latex gloves if you have them will help.
