Roasted Sweet Potatoes with Speck and Chimichurri

Feel free to play with different herbs in the chimichurri recipe—that's what these brothers and co-chefs have always done: "When we were younger, our mom would buy lots of herbs, but she'd never use them," says Michael. "So we'd just blend them with garlic, oil, and vinegar."

Ingredients

Makes 4 servings

4 small sweet potatoes, unpeeled, cut lengthwise into wedges
2 tablespoons plus 1/4 cup olive oil
Kosher salt, freshly ground pepper
1/2 cup fresh cilantro leaves with tender stems
1/2 cup fresh flat-leaf parsley leaves
1/4 cup fresh oregano leaves
1 tablespoon fresh thyme leaves
2 garlic cloves
2 tablespoons red wine vinegar
2 ounces thinly sliced Speck or prosciutto, torn
  1. Step 1

    Heat oven to 425°F. Toss sweet potatoes and 2 tablespoons oil on a large rimmed baking sheet; season with salt and pepper. Roast, turning once, until tender, 25-30 minutes.

    Step 2

    Meanwhile, pulse cilantro, parsley, oregano, thyme, and garlic in a food processor until finely chopped. With motor running, slowly add vinegar and remaining 1/4 cup oil and process until combined; season with salt and pepper.

    Step 3

    Spoon chimichurri onto a serving platter and top with sweet potatoes and Speck.

  • This has been a go to for years for a light supper or side dish. Slivered fresh fennel gives it some crunch. Prosciutto is a great sub for speck. It's especially good with a fried egg. It makes great leftovers too!

  • Gotta love that chimichurri. Super-simple recipe, really lovely with the speck, but not necessary. The roasted sweet potato and herbs are great on a salad base for a light pack lunch (plus maybe a little goat cheese), or alongside some pork tenderloin for dinner. But speck or prosciutto is delicious if procurable.

  • This was my first time making Chimichurri. We had this for Christmas dinner along with the quick Porchetta from this site. The entire meal was delicious. The Porchetta was already a family favorite. The roasted sweet potatoes with the Chimichurri sauce and prosciutto was the perfect side.

  • This was excellent and easy. I have tried with a variety of herbs and although cilantro and parsley are essential, the others can be varied. Speck or prociutto are not necessary but add a nice touch of salt so you may want a grind of sea salt to replace them if you make this dish vegetarian. We have also made the variety with almonds and sage- it was lovely although in our opinion not as good as this one. Beautiful presentation on all of them- different enough for a fancy meal but easy enough for Wednesday night.

  • I think this is my new favorite way to use chimichurri. Made this on a weeknight so favored prosciutto over making a special trip to find speck. Loved this and found it easy and creative. I served with a simple pan-seared pork chop, but would do grilled steak next time. There will be a next time.
