Tomatillo Salsa

Ingredients

Makes about 2 cups

1 pound fresh tomatillos, husked, rinsed, and quartered
1 fresh serrano chile, seeded and chopped
1/2 large white onion, cut into 4 wedges
2 garlic cloves, chopped
1/2 cup water
1/2 cup chopped cilantro
1 tablespoon fresh lime juice
  1. Coarsely purée tomatillos, chile, onion, garlic, water, and 1 teaspoon salt in a blender. Transfer to a large heavy skillet and simmer, stirring occasionally, until slightly thickened, about 15 minutes. Transfer to a bowl and cool to room temperature, then stir in cilantro, lime juice, and salt to taste.

  • This was great i added lemon juice not lime and used jalepenos because thats what i had in the garden....Awesome made me want to grow tomatillos every year!

  • it's about time there's tomatillo recipe where you don't parboil or broil the tomatillos first. great idea. it was simple and refreshing.

  • Left out serrano chili and water, added a T. sugar. Used red onion instead of white and did not cook the sauce. Just pureed everything together at the same time. Served it with chicken fajitas. Delicious!

  • Super yummy. I decided not to cook it and wonder what is the reason for doing so? Mine was very pungent-just the way I like it.

  • This was pretty good. I love tomatillos...but really dislike cilantro. (taste like soap). I upped the chile and the lime just a bit. Used a fraction of the cilantro. Substituted some fresh parsley and oregano (just a little). Very nice!

  • So good, so easy. But if you want any heat, add more than 1 chile. I added 1 and a half, and it still had not detectable heat.
