Blood Orange–Chia Pudding

Why drink O.J. with your yogurt when you can mix it in?

Ingredients

Serves 2

1/2 cup plain yogurt
1/2 cup fresh blood orange juice
1/4 teaspoon orange-flower water
1 pinch kosher salt
2 tablespoons honey, plus more for serving
1/4 cup chia seeds
2 blood oranges
Chopped pistachios (for serving)
  1. Step 1

    Whisk yogurt, blood orange juice, orange-flower water, salt, and 2 Tbsp. honey in a medium bowl. Whisk in chia seeds, cover, and chill at least 8 hours and up to 1 day.

    Step 2

    Cut peel and white pith from oranges. Cut along sides of membranes to release segments into a medium bowl.

    Step 3

    Give pudding a good stir and divide between small bowls, layering with some orange segments. Top with pistachios and remaining segments; drizzle with honey.

  • Totally delicious and visually appealing! January is blood orange season and this recipe makes great use of them. I didn't have orange water on hand so substituted rose water, and also used honey-flavored Greek yogurt. The pistachios add a wonderful texture (and I also added some bee pollen).

  • I tried to make this as written, but I couldn't find blood oranges or orange flower water. So I had to use regular orange juice. I think liking this recipe depends on how much you like plain yogurt. The tang was very heavy. I was hoping it would be more creamy and lightly sweet, less tangy. The nuts added a nice crunch. I'll probably make it again, but play around with other ingredients to create what I wanted.
