Ingredients

Makes 1 serving

1 cup frozen blueberries
1/2 cup peeled and grated red beet (1 small beet)
1/2 cup low-fat Greek yogurt
3/4 cup coconut water
  1. Place ingredients in blender in the order listed and blend until smooth.

  • A good smoothie with one change to the recipe - use vanilla yogurt instead of plain. Without the extra sweetness of the vanilla yogurt, the smoothie tastes too close to borscht.
