Caesar Salad with Herbed Croutons

"On a visit to Miami Beach, a friend suggested we try the Gaucho Room at Loews Miami Beach Hotel," writes Anthony M. Stephens of Concord, California. "I have had many versions of Caesar salad, but none compare to the one I ate there; the house-made herbed croutons and dressing were so fresh. Would chef Frank Randazzo share his recipe?"

Ingredients

Makes 6 to 8 servings

For dressing

1/2 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
8 anchovy fillets
3 tablespoons fresh lemon juice
3 garlic cloves
2 tablespoons Dijon mustard
3/4 cup olive oil

For croutons and salad

3 tablespoons olive oil
4 garlic cloves, minced
2 teaspoons chopped fresh thyme
1 teaspoon chopped fresh rosemary
3 3/4-inch-thick country bread slices, crusts cut off, bread cut into 3/4-inch cubes (about 4 cups total)
12 cups coarsely torn hearts of romaine (about 9 ounces)
1/2 cup freshly grated Parmesan cheese
Cracked black pepper
  1. Make dressing:

    Step 1

    Combine 1/2 cup Parmesan, anchovies, lemon juice, 3 garlic cloves, and mustard in processor; blend well. With processor running, slowly add olive oil. Season with salt and pepper.

  2. Make croutons and salad:

    Step 2

 until fragrant, about 1 minute. Remove from heat. Add bread cubes to skillet with garlic-herb oil and toss to coat. Spread out bread cubes on rimmed baking sheet. Sprinkle with salt and pepper. Bake just until croutons are golden, stirring occasionally, about 15 minutes.

    Step 3

    Place romaine in large bowl. Add 2/3 cup dressing and 1/4 cup grated Parmesan cheese and toss to coat. Add croutons and toss well. Serve, passing remaining dressing, Parmesan cheese and cracked black pepper separately.

  • This is the best Caesar salad dressing on the planet - a perfect balance of flavors. Even my friend who doesn't eat any fish at all, loves this dressing, not knowing that it contains anchovies. Use only freshly grated Parmesan for the best results. Be careful to only put 1/2 cup of the Parmesan in the blender for the dressing and the rest in the salad, otherwise it will be too thick to blend. The dressing makes enough to have leftovers for another day.

  • The easiest and most delicious Caesar dressing.. it makes me look like a STAR every time I make it and indeed plenty of left-overs dressing for another salad. When it is a bit too thick I add a tablespoon or so of filtered water. At times, depending on the olive oil I use (sometimes Tuscan has a bit of a bite) I will add the tiniest bit of honey. This time I also added a splash of Worcester sauce per the comments and I must say it is the best version I have made yet. Shhh keep this our secret :) . The croutons ROCK the planet... I'll admit I add a bit of additional butter with the Olive oil and have received many a wedding proposal based on the taste of these croutons..../ they can change the world. Enjoy!

  • Made for 28 for New Year's Eve. Quadrupled the recipe but used only 3/4 anchovies in recipe. Also used only 2 cups olive oil instead of 3. It was a good balance...enough but not too much anchovy taste. To make a festive presentation, served in parmesan baskets with a crab claw and shaved parmesan on top. Many compliments and quite a bit of dressing left over.

  • Ok, just the best and easiest Caesar recipe I ever ate. You have to like anchovies of course, but if you do, you will love this recipe. To the earlier reviewer who was wondering about making the croutons with gluten free bread, I did (actually they were gluten free burger buns because I had a couple on hand that needed to be eaten!) and they came out great.

  • This is very good. I added a splash of the anchovy oil that the fillets came in and I think it added even more yummy flavor. A keeper!

  • This dressing recipe makes a generous portion, enough for a few more salads later this week! I've yet to try making the croutons with gluten-free bread, but it sounds easy.

  • This has become my go to recipe for a sure crowd pleaser. It is amaaaazing and never fails to elicit ooohs and aaaahs. I reduce the anchovies to six but otherwise make no changes to the dressing. The croutons are yummy but I generally make simple croutons (without the herbs) or buy prepackaged. It never seems to diminish the resutls and it frees up some extra time.

  • I craved a good old fashioned ceasar's salad, and this dressing was the best. It's so simple to put together, and tastes fantastic. Love the garlic and anciovies - gives it a fab bite. There was more than I needed, but I just jarred it, and look forward to my next Ceasar's Salad. Saves cooking time later on when I know I will have it again this week!

  • Served this last night and it was a hit. I was told that the caesar was a definite "do over" and I couldn't agree more. I have tried several dressings recipes that are a lot more complex and include a raw egg, and this one beat them all hands down. Is very rich in flavor and garlic and for me that is what a caesar dressing should be! I added a splash of worcestershire also and used anchovy paste.
