This smoothie has all the familiar flavors of carrot cake: sweet coconut, buttery walnuts, fragrant cinnamon, and warm vanilla.

Ingredients

Makes 1 serving

2 tablespoons unsweetened shredded coconut (or flakes)
2 tablespoons roughly chopped walnuts
3/4 cup grated carrot (1 large carrot)
1/2 cup frozen peeled orange segments
1/2 banana, sliced and frozen
1/2 cup low-fat Greek yogurt
1 teaspoon honey
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup coconut water
  1. Place ingredients in blender in the order listed and blend until smooth.

  • I liked the flavor of this smoothie tho I wouldn't say it tasted like carrot cake. However the raw carrots and nuts made the texture is very grainy which put my husband off.

  • So good! I used orange juice instead of oranges, full banana instead of half and full teaspoon of cinnamon. Delicious.

  • This is definitely reminiscent of a slice of carrot cake! I made it exactly as written except I substituted vanilla almond milk for the coconut water since I was fresh out. This is a great alternative to the berry based smoothies you may be used to!
