Green Goddess Dressing is a perfect example of the magic of anchovies—they amplify and deepen the herbal flavors in this sauce without ever announcing their presence. For more recipes and tips, see ourHomemade Salad Dressing Primer.

Ingredients

Yield: Makes about 1 1/4 cups

1/2 cup purchased orhomemade mayonnaise
1/4 cup sour cream
1 scallion, chopped (about 2 tablespoons)
1 1/2 to 2 teaspoons anchovy paste
1/3 cup chopped fresh flat-leaf parsley
2 to 3 tablespoons chopped fresh chives
2 tablespoons chopped fresh tarragon
3 to 4 teaspoons freshly squeezed lemon juice (from 1 lemon)
Freshly ground black pepper
  1. In a blender or food processor, blend together the mayonnaise, sour cream, scallion, anchovy paste, parsley, 2 tablespoons chives, tarragon, and 2 teaspoons lemon juice, stopping and scraping down the sides occasionally, and blending until the dressing turns green. Taste and blend in the remaining tablespoon chives and 1 teaspoon lemon juice, if desired. Season the dressing with freshly ground black pepper. DO AHEAD:The dressing can be prepared ahead and refrigerated, in an airtight container, up to 4 days.

  • Way too much tarragon. Personally, I would just leave it out. That being said, salad dressing recipes can rarely be followed verbatim. They have to be balanced and tweaked to your liking. This is particularly true of Green Goddess dressing, and this one is no exception. I NEVER buy any bottled salad dressings and make all of mine from scratch. But, I must admit that the best Green Goddess I've ever tasted was served to me decades ago. It was from a dried package mix that was stirred into mayo and a little milk. It was delicious! And why not? It certainly worked for Hidden Valley Ranch!

  • First, I am not sure why the scallion is in this recipe twice. I used one scallion. I started with 2 T chives & 2 T lemon juice. All of my herbs were freshly cut from my own garden. The taste of the tarrogon was most noticible. While I LOVE tarragon, I thought for this dressing it should be tamed. I added the additional chives, and also found it needed another T lemon juice to brighten up the flavor. Next time I will double this dressing, and I may tinker with it to make a tarragon-centered dressing. Very good - but if you are going to compare this to any sort of bottled Green Goddess dressing, you will not like it! This has flavor!
