Grilled Chicken Breasts with Honeydew Salsa

The salsa has a perfect sweet-spicy balance, and it's an easy way to turn simple grilled chicken breasts into a dish that's dinner-party special.

Ingredients

Makes 4 servings

1 1/3 cups finely diced peeled seeded honeydew or other melon
1/4 cup finely chopped fresh cilantro plus 1/4 cup cilantro leaves
1/4 cup finely diced red onion
2 tablespoons fresh lime juice
2 tablespoons olive oil
2 teaspoons finely grated lime peel
1 teaspoon finely chopped seeded serrano chile
Nonstick vegetable oil spray
4 boneless chicken breast halves with skin
  1. Step 1

    Combine diced melon, 1/4 cup chopped cilantro, finely diced red onion, lime juice, olive oil, grated lime peel, and chopped serrano chile in medium bowl. Toss to blend flavors. Season melon salsa to taste with salt and pepper.

    Step 2

    Spray grill with nonstick vegetable oil spray; prepare barbecue (medium heat). Sprinkle chicken breasts with salt and pepper. Grill chicken breasts until skin is crisp and brown and chicken is cooked through, about 5 minutes per side.

    Step 3

    Slice chicken breasts and arrange on plates. Top with melon salsa and cilantro leaves and serve.

  • This was a pretty tasty and simple, healthy recipe. I increased the lime juice by about 1/2 Tbsp. My wife and daughter don't eat spicy stuff, so I cut the salsa in half prior to adding the Serrano and diced up 1/2 of a peach to add to their bowl. Both options came out pretty good. I will probably make this again and experiment with some different ingredients.

  • Followed recipe using a not too sweet honeydew, used about 2 1/2 TB lime juice, and more cilantro and jalapeno pepper. We enjoyed the salsa and would make again. Perfectly paired with a spicy grilled chicken breast.

  • Easy, healthy and fresh tasting. Used skinless chicken breast, threw some cajun seasoning on the chicken. Simple, fast, a good weeknight recipe. Paired with rice, and reheated the rice, chicken and salsa all together in a burrito wrapper the next day for lunch, which came out better than anticipated.

  • I just made this tonight for dinner for my husband and I. It was so delicious and the salsa was so refreshing! A great spicy to sweet combo. I used equal parts honeydew and cantaloupe and also added 1/4 cup chopped cucumber in the salsa. I made the full amount of salsa (for 4 people) and my husband almost ate all of it! I chopped up the the chicken and put it over brown rice then served the salsa over the chicken. I then topped with a dollop of sour cream, feta cheese, extra cilantro and tortilla strips, for crunch. So good... will definitely make again!

  • I used watermelon instead of honeydew, a mixture of cilantro, mint and basil and lots of lime. A great side for just about anything; chicken, black beans and yellow corn, tortilla chips, a taco salad. Perfect for those who don't like tomato salsa.

  • This salsa was awesome! Darkknightdad was right... the more lime the better! One and all LOVED it! I also doubled the batch later and used as a summer salad and a salsa with corn chips. Wonderful!

  • This was good, not great. Fun for summer BBQ's, but the salsa didn't 'wow' anybody, although everyone liked it. Probably won't make again.

  • Wow this was so good and so easy to make....perfect recipe as is....even my 9 year old loved the salsa! Took the advice of another review and grilled some sour dough bread w olive oil then and added a touch of fresh parmesan cheese -- great combo. will definately make again.

  • I received some honeydew from my CSA and my SIL found this recipe so I decided to try it. I wasn't that excited about because I thought it wouldn't have flavor. I was very wrong. It was delicious and reminded me of a dish that I'd get at a higher end TexMex place here in Austin. I did alter the recipe a little bit, though. I marinated skinless chicken breasts in lime juice, canola oil, some cumin, a touch of chipotle power, salt and pepper. It marinated for about 30 minutes. I also topped the chicken with some cotjia cheese and served it over white basmati rice. So good!!

  • This was pretty good. The onions kind of overpowered the salsa. I made as instructed. I would make again if I needed to use up a melon, but otherwise, probably not.
